  2. Now I am second guessing myself...talked to my cousin on facebook last night. She told me she had been in an auto accident and she got a half million dollars. I am glad that she lived..that is the most important thing:) Now I am second guessing myself when the judge gave the money I deserved to have away! My lawyer threatened to appeal the decision so the people who got the money, decided to give me 5,000 dollars. I needed the money and decided to take the 5,000 rather than take the risk of getting 0 money! My cousin has one more surgery left. We both had surgeries..too many to count..the only difference was I was in a coma, I was paralyzed amd I had a cornea transplant. Thanks goodness she wasn't in a coma or paralyzed like I was. I thank my blessings that I am alive and more..but..now I am doubting my decision for not appealing the judges decision. Do you think I was right to not appeal? I know it is too late now...but..am wondering if I messed up by not appealing and need an answer from someone who knows if I messed up big time.

Ok...the people by our house that I talked about once, where she put her boyfriends clothes outside in a container after fighting the night before and through her cell phone out..well apparently she took him back. I was sitting outside yesterday later in the afternoon and I heard alot of fighting going on over there again and thought somoneone was going to blow someones head off! I saw a different neighbor of mine was outside...so I went and told him that there was a big fight going on over there and that my hon wasn't home yet from work and was nervous. He told me they are always fighting over there and that he would keep an eye out on our house. I had no idea they were together again. We went and talked to our neighbor later who was keeping an eye out and he told us that he saw cops all over the place awhile ago..but..that the guy who was causing the fight again..had taken off before the cops could get there. Man I wish they would just move and get out of here! Am so sick of it. With the housing situation the way it is...you never know who you are going to get as neighbors. Good news though..my hon's team won their softball game last night:) Another himmm though...we were on our way home last night and a car by us...yes..it was a woman driver...was smoking a cigarette, talking on her cell phone and trying to drive at the same time..that drives me crazy! I wish a cop would of been there to see it and nail her you know what! My sister who does talk to me..finally joined facebook:)whohoo:) so that made my morning start off right:)

  6. fro daddy..hope I typed your name right...I am so very sorry...geez..what is it with families who treat us like this anyway.. my sister- the social worker...cleaned out my bank account and never gave me the money that I had in it...she gave me 50.00 a month to live on when she was conservator...I called her when our sister died..I got the answering machine..left my phone number in case she wanted to find out the details..she never called me..she didn't give a crap and she did something else that really hurt me..but..I will keep my mouth shut on that one..it hurts me too bad. I don't think Alice on The Brady Bunch could even fix these family messes on here... Ok...bad joke...seriously...I am sorry for you and other members on here who have family crap like I do. Maybe we should have a big keg slumber party at my house and I will make appetizers ok? Who is game on that one? Love you all...hugggssss
  7. I bet we could have a long talk.. My sister who won't talk to me...HATES to cook...when I was staying with her while I went to rehab...I don't remember her cooking at all...she ordered out alot. She did let me cook one meal because I begged her to let me. Her hubby really liked it and thanked me. I hate take out food all the time. I am very sorry about your wife's family situation..so sad. I am trying so hard to let the paat go and move on..but..when it comes to family...that hurts me alot. Take good care.
  8. This HMMM>..is one of my biggest I talked to my sister on the phone just now...our other sister who was guardian and conservator of me when I was ill..won't talk to me on the phone. I asked my sister who will talk to me why our sister won't talk to me and she told me that our sister just doesn't think we have anything in common. I told my sister that I think being family should be common enough. I just don't get it why our sister who won't talk to me took time to help me when I was in the hospital, etc. and why she won't have anything to do with me. It makes me very sad. She got money from SSI for one thing and more when I was ill being my conservator. I would hate to think it was just for the money. Well..at least I know in my heart that I have tried to contact her. And to think she is a social worker and got the Big Sister Little Sister Award once..go figure. Am I the only one who has a dysfunctional famiy? I wonder sometimes.
  9. Pico De Gallo: 4 Cups Fresh Diced Tomatoes 1 Cup Fresh Diced Red Onions 2 T. Finely Chopped Cilantro 1/3 Cup Diced Jalapenos 2 Tsp. Black Pepper 1 Tsp. Garlic Powder 1/4 Cup Vegetable Oil 1/4 Cup White Vinegar Combine all ingredients and store in a tightly covered container. This will taste best when refrigerated for a day and will keep up to 5 days. ***Simply drain the liquid from the Pico de Gallo and dish it out and enjoy.
  10. Pico De Gallo: 1 Small To Medium Jalapeno Pepper, Minced 1/4 Cup Diced Tomato 1/4 Cup Onion, Finely Diced 3 T. Lemon Juice 1-1/2 T. Salt, Or To Taste Combine all ingredients. Let sit for at least a half hour so flavors will blend. ***The longer it sits, the better it will be.
  11. Pico de Gallo: 1/2 Cup Diced Onions 1/2 Cup Diced Tomatoes 2 T. Chopped Cilantro Diced Jalapenos To Taste-(Seeds Omitted) Dice both tomatoes and onions. Chop cilantro, and add enough diced Jalapeno seeds to suit your desired hotness. Mix together, and serve with Tortilla Chips or Mexican Food.
  12. Pico de Gallo: 3 Large Tomatoes, Diced 1 Large Onion, Diced 2 T. Diced Jalapenos 1/2 Cup Fresh Cilantro, Diced 2 Tsp. Salt 1/2 Tsp. Black Pepper 1/2 Tsp. Garlic Powder 1 T. Olive Oil 1 T. White Vinegar Mix all ingredients together in large container until well blended. Allow sitting for at least 6 hours, it is better if allowed to sit overnight. Serve with Tortilla Chips or Mexican Food.
  13. Artichoke Spinach Dip: 1-(6.25-oz.) Jar Marinated Artichokes, Drained 1-(10-oz.) Pkg. Frozen Chopped Spinach, Thawed And Drained Very Well 1/2 Tsp. Minced Garlic 1/3 Cup Freshly Grated Romano Cheese 1/4 Cup Freshly Grated Parmesan Cheese 1 Cup Shredded Mozzarella Cheese 1/3 Cup Cream Or Half and Half 1/2 Cup Sour Cream In food processor blend artichokes, Romano Cheese, Garlic and Parmesan Cheese for about 1-1/2 minutes. Artichokes and cheeses should be minced, but should not be pasty. In a mixing bowl add drained Spinach, Cream, Sour Cream, Mozzarella; stir well. Spoon into mixing bowl mixture from food processor. Blend all ingredients. Mixture should have a medium thick consistency. Spray an oven proof shallow serving dish. Pour artichoke mixture into baking dish and bake for 20 – 25 minutes at 350 degrees. Artichoke Dip should be a little bubbly and cheese melted through. Remove from oven and serve with your favorite heated Tortilla Chips, Sour Cream and Salsa.
  14. I owe you an apology and hope you accept it. I was a b-tch! I should stay away from topics that concern drunk driving. My dandruff gets riled up too much when it comes to drunk drivere...so sorry. It wasn't fun putting my life back together and all the therapy I had to go through. I feel real bad for familys who get loved ones killed or hurt by drunk drivers. Again...I am so sorry.
  15. I have no idea what you meant by "make Roxy-pleasing decisions in everything they do" and I don't really care either! You don't know me from Adam! Am I perfect? NO..noone is! You are right that parents are not to blame for the actions their kids are resonsible for. My point was that I don't care how nice the parents are and I still don't care either! Their kid is responsible for killing people..that is all...should the blame be put on the parents...NO! I just wish more parents woud take the time to talk to thier kids about the consquences of drunk driving! Maybe his parents did talk to him- and if they did talk to him about it..apparently he didn't listen! For being an honor student..he sure didn't use his brains by drinking and driving! GEEZ....Roxy making decisions is uncalled for..I AM NOT PERFECT AND NEVER CLAIMED TO BE!
  16. Baked Potato Skins: 10 Baked Potato Skins Halves-(Empty Of Potato) 1 T. Melted Butter Seasoned Salt 1 Green Onion Diced 1/2 Cup Fried Bacon, Diced And Crispy Fried-(About 5 Strips) 3/4 Cup Shredded Cheddar Cheese Heat oven to 375 degrees; brush potato shells with melted butter and sprinkle season all to taste and bake for 15 – 20 minutes until crisp but not dry and hard. Remove and sprinkle with cheese, bacon and onion, place back in oven until cheese is melted. Serve with Sour Cream, Hidden Valley Ranch Dressing Or Bleu Cheese Dressing.
  17. Tortilla Chips With Taco Dip: 1-(12-oz.) Jar Salsa 1-(15-oz.) Can Chili Chopped Onions To Taste-(Opt.) 1-(8-oz.) Pkg. Cream Cheese 1-(16-oz.) Carton Sour Cream 2-(16-oz.) Bags Cheddar And Jack Cheese In a medium sized pot turn the heat onto medium heat, add the Salsa, Chili, Sour Cream, Cream Cheese, and Cheddar Cheese. Heat gently and stir until all ingredients have melted. This Taco Dip can also be heated through in the microwave. Serve with Tortilla Chips of your choice. ***Black and Gold Tortilla Chips are in picture.

Braised Beef Shsrt Ribs: Yield: 4 to 6 servings. 8 to 10 beef short ribs (about 3 pounds) 1 medium sized onion, chopped 3 rib of celery chopped 3 carrots chopped 2 cups shiraz red wine 2 cloves garlic, chopped 3 bay leaves 4 cups chicken broth 2 tablespoons vegetable oil Preheat oven to 350 degrees. In a large heavy bottomed pot over medium high heat drizzle a couple tablespoons of vegetable oil. Brown beef short ribs on all sides. Do not crowd the pan, you may need to brown the ribs in 2 or 3 different batches. Remove ribs and toss in chopped garlic, chopped celery, chopped onions, and chopped carrots. Cook the vegetables until they begin to soften and caramelize. Remove the vegetables from the pan, and pour in red wine. Deglaze the pan using the red wine, be certain to scrape the browned bits off of the pan with a spoon. When this mixture begins to thicken, add vegetables, browned beef ribs, bay leaves, and chicken stock. Cover pot, and place into the heated oven. Cook for approximately 2 1/2 hours. Strain ribs and vegetables from the pot, and set aside. Drain off excess fat inside of the pot, and then place the pot onto the stove top, and reduce the liquid inside of the pot by half, return the vegetables and ribs to the pot. Serve ribs with mashed potatoes, noodles, polenta or even risotto.
  19. Potato Skins: 3 Large Potatoes 1/2 lb. Bacon 1 Pkg. Shredded Cheese Sour Cream And Chives Wrap potatoes in aluminum foil and bake at 350 degrees for an hour. ***Or microwave potatoes. Once the potatoes are tender, let them cool for 10 minutes. Once they are cool enough to handle, slice them in half. Scoop out a good majority of the potato leaving only a 1/4 inch from the shell and set aside. In a frying pan, cook the bacon until brown. Drain and place the bacon on a paper towel. Once the bacon has cooled, chop it up into little bits and pieces. Place the potato skins on a baking sheet and top with bacon and then the cheese. Bake at 375 degrees for approximately 20 minutes or until the cheese has melted. Put the sour cream in a small bowl and sprinkle with chives. Spoon on potatoes. ***You can Deep Fry the skins once they are hollowed out. Just long enough to get golden brown then use the oven to melt everything together. ***Be careful not to scoop too much from the bottom or the potato skin will tear.
  20. I agree with you..the ones who drink and drive that end up hurting someone or killing somone..NEVER get hurt! And it pisses me off big time that repeat drunk drivers never seem to learn their lesson and don't pay by getting their you know what in jail! That really pisses me off! Schlichtemeier was convicted in Lancaster County Court of driving while intoxicated in 2008. I know this isn't about me..but..it pisses me off big time that the a-hole drunk driver who put me in a coma..didn't have to spend one day in jail!!! I have no sympathy for drunk drivers and I don't give a rat's a_s how nice their parents are either!! If they were good parents at all..they would of sat down with their kids...tell them the consequences of driving drunk or better yet..take them to a rehab center where innocent people have paid big time by getting hit by a drunk driver..let them see innocent people in wheelchairs...head trauma and more!!! I HATE DRUNK DRIVERS AND I HOPE THE COPS NAIL EVERY DRUNK THAT DRIVES!!! AND IF THEY PASS THE TEST THEY HAVE TO TAKE TO SEE IF THEY ARE DRUNK..I STILL DON'T THINK THAT THEY SHOULD BE ABLE TO JUST GO ON THEIR MERRY WAY....MAKE A FRIEND OR SOMEONE PICK THEM UP OR SOMETHING!!' For being an honor student...HE HAS NO COMMEN SENSE!!! AND THAT MAKES HIM STUPID!! ok..done venting....drunk driving pisses me off big time!! My hearts go out to the family and friends who had loved ones who died.
  21. Doritos Chicken: 4 Cups Chicken, Cooked & Chopped-(Can Use Rotisserie Chicken From The Grocery Store To Make It Easier) 1-(16-oz.) Carton Sour Cream 2 Tsp. Chili Powder 1 Tsp. Salt Or To Taste 1/4 Tsp. Garlic Powder 1 Cup Grated Cheddar Cheese 1 Cup Grated Mozzarella Cheese Doritos-(Any Flavor) **Spicy Doritos Or Pepper Jack Doritos Are Good Crush Doritos and just cover the bottom of a 4 quart glass pan. Mix all other ingredients, except cheese, and place on Doritos. Crush more Doritos on top of this. Add cheese on top. Bake for 20 minutes at 350 degrees.
  22. RUNZA CASSEROLE: 2 lbs. ground beef 1 onion, chopped 4 cups shredded cabbage salt & pepper 2 tubes crescent rolls 1 cup shredded Mozzarella Cheese Brown ground beef and onions, drain. Put cabbage on top to steam for a few minutes. Add salt and pepper to taste. Spread 1 tube of crescent rolls over the bottom of a 9x13 pan (do not grease the pan). Place ground beef mixture on top. Sprinkle with cheese. Place the second tube of crescent rolls on top of the cheese. Cover with foil. Bake at 350° for 35-40 minutes. Runza: 2 Bags frozen dinner rolls 2 lb ground round 1 head of cabbage (chopped) 1 medium onion (chopped) Salt, pepper, garlic powder to taste Thaw rolls at room temp. (about 2-3 hrs). Brown the ground round and drain, put back in pan with seasonings, cabbage and onion. Allow to cook down-about 45 min.. Let dough rise, then punch down and roll out a portion to 1/4" thickness on floured surface. Add about ½ cup of the meat mixture to the rolled out roll. Fold dough pieces over and seal the edges, then place seam-side-down on a greased cookie sheet. Let rise 20-30 minutes, then bake in pre-heated 375 degree oven for 20 minutes or until brown. Some people like cheese and caraway in their filling. Feel free to add accordingly!
  23. Homemade Baked Tortilla Chips: 10-12 Flour Tortillas Vegetable Oil Spray Spices Salt Cut Flour Tortillas into 8 wedges. Spray baking sheet with oil. Arrange Flour Tortilla wedges in a single layer on the baking sheet and spray lightly with oil. Sprinkle with seasonings: Salt or Seasoned Salt, Chili Powder, Cinnamon Sugar, etc. Bake until crisp and lightly browned, approximately 10 minutes. Great with Salsa, Guacamole, Hummus, whatever you like to dip!. Makes great cinnamon sugar chips for kids and desserts, too. Note: Can substitute Pita Bread for Pita Chips or Corn Tortillas for Corn Chips.
