Venison Cheddar and Jalapeno Summer Sausage

1 cup cold water

3 TBS spoons tender quick

2 tsp mustard seed

1 tsp garlic powder

1 tsp coarse black pepper

2 tsp liquid smoke

3 LBS ground venison

1 cup cheddar cheese

2 jalapenos

 

Mix first 6 ingredients till tender quick is dissolved. Mix in Venison, cheese and peppers.

 

Divide mixture in half and form into logs 2 inches thick. Wrap in aluminum foil and refrigerate 2 hours.

 

Remove from aluminum foil and put on cookie sheet. Bake for 1.5-2 hours at 300 degrees.

 

Cool on rack till room temperature.

 

You can replace some of the venison with either beef or pork of you like. Sometimes it helps it stay together.

I'm looking for a really good jerky recipe. I need one for the oven because I don't have a dehydrator.
