Roxy15 Posted June 8, 2015 Share Posted June 8, 2015 This recipe comes from a good friend of mine, she is a great cook. Chicken & Rice: 4 Cups Cooked Chicken, Diced...3 Cups Chicken Broth8-ozs. Sour Cream2 Cups Minute Rice2 Cans Cream Of Soups/Chicken Or Mushroom Or Both1 Medium Sauteed Onion-(Opt.)2 Tubes Crushed Ritz Crackers1 Stick Melted Butter-(1/4 lb.) Cook the chicken; when cooked, debone and dice. Mix with the chicken broth, rice, soups and sour cream. Add sauteed onions, if using; mix well. Place in a greased 9x13-in. casserole. Bake at 350 degrees for 20 minutes. Meanwhile, melt the butter and add to the crushed Ritz crackers; mix. After 20 minutes, sprinkle over the partially cooked casserole. Bake an additional 15 minutes, until crackers are browned and casserole is bubbly. Quote Link to comment
