  1. Thanks to the members who were worried about me. I had to take some time off. Had some cancer concerns and surgeries, a friend of mine died, and more stuff. I will post recipes on here again but also someone on this board hurt my feelings a lot. However, I will not let them have that power over me to stop me from posting recipes, etc. I hope all is well with everyone.

  5. I made this recipe for the first time yesterday and it is by far the best pork roast recipe I have ever made. The only thing I will do differently next time, is to cut the potatoes in half instead of chopping them. If I decided to make mash potatoes instead, I will make the potatoes separately on the stove so the mashed potatoes won't be brown. The gravy was delicious and I will make it this way from now on also. Crockpot Pork Roast With Vegetables & Gravy: Heat a large skillet up over medium high heat. Put 3 T. Olive Oil into the skillet. Take the pork roast and put it on a plate and sprinkle salt and freshly ground black pepper on the top/bottom/sides on the pork roast. Place the pork roast into the skillet and allow it to get a nice golden brown sear on both sides. While the pork is in the searing skillet, peel and chop 5-6 Russet Potatoes and one white onion. You want them to be uniform in size so they cook evenly. Spray a large crockpot with cooking spray. Place the seasoned pork roast in the crockpot and put baby carrots around the pork roast. *** I used a l-lb. bag of baby carrots, the recipe called for 3 cups. Layer the potatoes, onions on top of the pork roast; ***I added 1 bunch of fresh garlic, chopped. Chop 1 T. garlic and put it in a small bowl. Add 1/4 cup of soy sauce, 1/4 cup Newman's Own Balsamic Vinaigrette-(couldn't find that so used Newman's Own Lite Balsamic Vinaigrette), 1/2 cup water/used bottled water/and 1/2 cup brown sugar. Whisk the ingredients together making sure the brown sugar gets dissolved, then pour it all over the top of the potatoes. Sprinkle the potatoes with some salt and ground black pepper. Cover the crockpot. The recipe said to cook it on high for 4-5 hours or if your crockpot cooks quickly, cook the meat and sauce together for 4 hours, then add the vegetables and cook for an additional 2 hours. I just cooked it on high to get it going and then lowered it to low because I got a late start. Next time, I will start it at 6 or so a.m. and let it cook on low the whole time, because we usually eat late. When the pork roast has cooked through, I turned the crockpot off to let the pork roast and let the meat set with the lid on for 5-10 minutes before serving. The pork roast is very tender and you won't need a knife to cut it. To a medium saucepan, I put 2 pkgs. McCormick Pork Gravy Mix, 1/4 cup milk, 1/4 cup bottled water, 1 can cream of mushroom soup-(undiluted)-ground black pepper; whisk to combine and cook over medium-high heat, stirring occasionally, until heated through. Serve the pork roast and vegetables drizzled with gravy over the top.
  6. Snickerdoodle Cookies: 1 Cup Blue Bonnet Margarine, Softened In Microwave 1-1/2 Cups Sugar 2 Eggs 2-3/4 Cups Sifted Flour 2 Tsp. Cream Of Tartar 1 Tsp. Baking Soda 1/4-1/2 Tsp. Salt 4 T. Sugar 4 Tsp. Cinnamon Preheat oven to 375 degrees. Mix 4 T. sugar and 4 Tsp. cinnamon in a small bowl. ***Make more sugar/cinnamon mixture if you need to. Soften margarine in the microwave. In a large bowl, mix together margarine, sugar and eggs. Sift together flour, cream of tartar, baking soda and salt; stir into shortening mixture. Chill dough if soft in the refrigerator, if necessary. Roll cookie dough into balls according to how big you want the cookies to be and roll each ball into sugar/cinnamon mixture. Put parchment paper on cookie sheet pans and put the cookies on them. Bake in preheated oven at 375 degrees for 8 minutes. Let cool on cookie sheets. I put the cookies in layers in a large round Tupperware container and I put wax paper in between each layer of cookies.
  7. This is really good and I put it on biscuits and hashbrowns. Sausage Gravy: 1 Scallion, Finely Chopped-(The White Part Only) 1 lb. Pork Sausage-(I Like Farmer John's Hot Sausage) 4 T. Butter 4 T. Flour 1 Cup Heavy Cream 1 Cup Milk ***If You Don't Have Heavy Cream, Use 2 Cups Milk 1 Pinch Cayenne-(Opt.) 1 Pinch Coarse Salt Or Regular Salt 1 Tsp. Freshly Ground Black Pepper Preheat a large skillet to medium-high heat. Add the scallion whites-(and a tiny drop of oil)-and sauté them for about a minute. Add the pork sausage and break up with a wooden spoon, browning all over. While the sausage is browning, melt the butter in a medium saucepan. Once melted and the foaming has subsided, add the flour. Whisk until it becomes a nice golden paste, about a minute. Add the cream, milk, cayenne, salt and freshly ground black pepper. Whisk until nice and thick and creamy. Pour the sausage into the cream sauce, little by little; mix. Serve over biscuits/hashbrowns.
  8. I had no idea how this was going to turn out, because I combined 2 recipes to make it. It turned out great and it is very easy to make. I like that you can make it ahead of time and bake it when needed. Smashed Potatoes: 5 Whole Large Red Potatoes 1 Stick Butter, Softened & Cut Into Pieces 1 Cup Pepper Jack Cheese, Grated 3/4 Cup Sour Cream ***It looked a little dry, so I added a little more to make it a little more creamier. 5 Slices Bacon, Cooked & Crumbled ***I Put The Cooked Bacon On A Paper Towel Plate To Drain; Next Time I Will Use The Whole Pkg. Of Bacon 2 Whole Green Onions, Sliced, Plus More For Topping Garlic, Minced In Food Processor, To Taste 1-2/3 Cup French-Fried Onions 1 Cup Pepper Jack Cheese, Grated Or Shredded Fry the bacon until crisp or done to your liking; drain. I chopped the bacon using the food processor or you can put the bacon in a plastic food bag, seal it and smash the bacon using a meat tenderizer. I microwaved the potatoes in the microwave until tender. You can also bake them in the oven until fork tender. I put the potatoes in a large bowl and added the softened butter, bacon, green onions, 1/3 cup French-Fried Onions and garlic; stirred it with a rubber spatula; added some salt and ground black pepper. I greased a baking dish and put the potato mixture in it. I topped it with more sliced green onions and 1 cup French-Fried Onions. I baked it at 350 degrees until it was completely hot, a little over a half hour.
  9. These are one of my favorite cookie recipes. I made them yesterday and used butterscotch chips. Sometimes I use half butterscotch chips and milk chocolate chips, if I have them both on hand or you can use either/or. I also have put raisins in them if I have them on hand. Oatmeal Butterscotch Cookies: 1 Cup Butter, Softened 3/4 Cup Sugar 3/4 Cup Brown Sugar 2 Eggs 1 Tsp. Vanilla 1-1/4 Cups Flour 1 Tsp. Baking Soda 1 Heaping Tsp. Ground Cinnamon 1/2 Tsp. Salt 3 Cups Quaker Oats 1 Pkg. Butterscotch Chips Preheat oven to 375 degrees. In a large mixing bowl, beat butter, white sugar and brown sugar together. Add eggs and vanilla; beat well. Add flour, baking soda, cinnamon and salt; mix. Add butterscotch chips and Quaker Oats on low, until combined. Roll into balls. Line cookie sheets with parchment paper and put the cookie dough on them. Bake for 8 minutes in preheated 375 degree oven. ****I let the cookies cool and them put them in a large round container and separate the layers of cookies with wax paper.
  10. I saw Ina make this recipe on foodnetwork this morning and it looked good, but, I thought to myself "I can make this better." Being that I cook like my mom did, I made my experiment and they really turned out great and they are so easy to make. You can even make them better by topping them with cooked crumbled bacon, some chopped green onions sour cream, etc. or whatever suits you. Everything is better with bacon is my philosophy:) Baked Potato Wedges: Preheat the oven to 400 degrees. I took enough potatoes to make 2 large potatoes since the ones I had left in the bag were a little on the small side. I scrubbed the potatoes well and put them on a cutting board. Then I cut each potato in half lengthwise and then cut each half lengthwise. I put the potatoes in a bowl and poured a little over 2 T. Olive Oil since the recipe called for 2 large potatoes and I had to guess on the potatoes I had that would make 2 large ones. I added some Paula Deen's House Seasoning and some Creole Seasoning and sprinkled in some minced garlic, Parmesan Cheese, Ground Black Pepper and Hidden Valley Ranch Seasoning; stirred the potatoes gently. Next time I may keep the House Seasoning out of it because of the salt factor. I spread out the potatoes on a small cookie sheet pan and baked them for 30 minutes. I tried to turn them a little over half way through but, they were tearing a little so I just left the rest be since I could tell they were done. I made some Hidden Valley Ranch Dressing and used that as a dipping sauce. This was easy as pie to make and would be a nice addition to hamburgers, steak, pork chops, etc.

We have tried to order something from Sears over the web for days and have placed the same order more than once and the order says it went through and then it says it didn't then the credit card gets billed then we have to call them and tell them that the order didn't go through and to take it off the credit card. Called them again last night and the same thing happened so we give up and will have to call them again to take it off the card. They said there is a glitch. Just thought I would warn anyone in here who is thinking of ordering something from sears over the web. It has been a big headache!
  13. A story pertaining to the name of this recipe. My dad wanted to name me Roxy when I was born and he got outvoted at the dinner table what to name me. I wish he would of won the vote. That didn't stop him, he always called me Roxy. Anyway, I combined recipes that I found on the net and from my church cookbook. I had no idea how it was going to turn out, but, it is the best beef stew I have ever made. Anyway, Jay told me I should name it Roxy's Country Beef Stew so that is how it got it's name. It filled up 2 large crockpots, so this makes a lot. Cut it down to size if you want. I cook like my mom did. She eyeballed when she cooked and experimented here and there. I miss you mom and dad, you are both always in my heart. Roxy's Country Beef Stew: I had 2 pkgs. of stew meat, a little over 2 lbs. total. I put it in a Tupperware container and put enough flour in it to cover the stew meat. I put the lid on and shook it until the beef stew was covered with the flour. I heated 2 tablespoons of oil in a large pan and heated it on low to medium low heat. I lightly browned the stew meat and sprinkled it with Paula Deen's House Seasoning and some black pepper. While the stew meat browned, I cut up some white onions and diced up some russet potatoes. When the stew meat was lightly browned, I put it in the crockpot and added the chopped onions. I Added The Following: 1-(16-oz.)-Bag French-Style Green Beans, 1-(16-oz.)-Bag Baby Carrots 1-(16-oz.)-Bag Frozen Green Peas 1-(16-oz.)-Bag Frozen Corn 2-(10-3/4-oz.)-Cans Tomato Soup/May Have Used 3 Cans/So Go By How Soupy You Like It 2-(14-oz.)-Cans Diced Tomatoes With Jalapeno Chili Peppers ***We like Spicy Food So Use Plain Canned Diced Tomatoes If You Don't Care For Spicy 2-(14.5-oz.)-Cans Beef Broth 2 Pkgs. McCormick Beef Stew Seasoning 1/2 Cup Kraft Minute Tapioca 1 T. Sugar Stir all the ingredients well in the Crockpot and cook on low all day or until hot and the potatoes are tender. ***I had this is one crockpot and it didn't seem to be getting hot like it should, so I put half of it in another crockpot and turned up the heat to high until the potatoes were tender, then turned the heat to low.

  17. I haven't made this, but it is on my list to make Bean Salad: You can use any beans you like. They used Canned Green Beans, Wax Beans and Kidney Beans. And to fancy it up, add Garbanzo Beans. Bean Marinade: 1 Cup Cider Vinegar 1/4 Cup Vegetable Oil 6 T. Honey Or Sugar 1/2 Tsp. Ground Dry Mustard 1/4 Tsp. Garlic Powder 1/4 Tsp. Ground Black Pepper 1/2 Onion, Sliced 1/4 Tsp. Onion Powder-(Opt.) 1/4 Tsp. Ground Cayenne Pepper-(Opt. But Nice) Drain the beans and place them in a large bowl. Cover with marinade and refrigerate. It is at its best after a couple days.

  19. Chicken Fried Steak: I took 1 egg and some milk and whisked it together in a pie pan. I put 2 cubed steaks in the pie pan and soaked them for a bit. I took them out and covered them with flour and put them in a pan with some oil. I sprinkled them with Paula Deen's House Seasoning that I have in a shaker by the stove for convenience and some black pepper. The coating stayed on better when I made them this way and will make them this way from now on.
  20. These are great and easy to make: Easy Peanut Butter Cookies: 2 Cups Skippy Super Chunk Peanut Butter 2 Cups Sugar 2 Eggs Mix all ingredients together, roll into 1-in. balls. Line cookie sheets with Parchment Paper. Put cookie balls on cookie sheets and using a fork, make a number-(#)-sign on top of each cookie ball. Bake in 350 degree oven for 9 minutes or until lightly golden brown around the edges. I put them in a large Tupperware bowl and line the layers with waxed paper.
  21. No, I haven't, but, I don't see why you couldn't freeze it and warm it up when you need to. I will only use this sauce from now on, I won't buy pasta sauce again.
  22. I added Finely Shredded Parmesan Cheese From A Pkg. to the cheesebread recipe I posted the other day and it made it even better. Here is the recipe to use: Cheesebread: For Fairy Dust: In A Bowl, Mix: 1/4 Cup Parmesan Cheese 2 T. Garlic Powder 1 T. Oregano 1 T. Onion Salt Put Fairy Dust in a shaker. Slice French Bread into slices. Butter both sides of bread with garlic butter and put on a cookie sheet. ***I just put softened butter from a tub in a bowl and mixed in some garlic powder. Sprinkle the top of each slice of French Bread with Fresh Mozzarella, Shredded and Finely Shredded Parmesan Cheese-(From A Pkg.) Using the shaker that you put the Fairy Dust in, sprinkle the top of each bread slice with the Fairy Dust. Preheat oven to 350 degrees. Bake cheese bread until the cheese is melted on top. I baked it for 10 minutes or so; we like the cheese to be a little brown on top.

This bread is better than you get at Pizza Hut! Meat Marinara Sauce: ****This recipe comes from a good friend of mine and she is an excellent cook. I cooked 2 lbs. of hamburger, drained it/cooked a pkg. of Hot Italian Sausage, sliced them and added it to the sauce, it made it spicy so use milder flavor if you don't like heat! I added a little more garlic and onion, so if you make this, just use the amount that you want. I made some fettuccini and served the sauce over it with cheese bread. I will never buy pasta sauce again. I probably will make the sauce in the crockpot next time, just to make it easier. This sauce is great for pizza, manicotti, or any kind of pasta dish. It can also be used as a pizza sauce. If using as a pizza sauce, prepare as directed, but add to the recipe 1 Tsp. of Italian Seasoning. ***I DOUBLED THE MARINARA SAUCE RECIPE LISTED BELOW!! Marinara Sauce: 2 T. Olive Oil 2 Garlic Cloves, Pressed ***I Used More/Minced It In Food Processor 1 Onion, Tennis Ball Sized, Chopped Fine ***I Used More, Chopped In Food Processor 1-(28-oz.)-Can Crushed Tomatoes 1-(5.5-oz.)-Can Tomato Paste 1-(14-oz.)-Can Tomato Sauce 1 T. Sugar 2 Tsp. Sweet Basil **I Just Used Basil 1/2 Tsp. Salt ***I Used Less 1/2 Tsp. Black Pepper ***Used A Little More 1 Pkg. Sliced Fresh Mushrooms Green Peppers, Cut Up-(To Taste) In a 2 qt. saucepan over medium heat in oil, cook garlic and onion until tender, about 5 minutes. Be careful not to burn or the sauce will be bitter! ***I used a large stockpot to put the onion/garlic mixture in with the rest of the ingredients since I doubled the recipe. Stir in crushed tomatoes, their liquid, and remaining ingredients. Reduce heat to low; cover; cook 20-30 minutes or until thickened; stirring occasionally. Be careful not to burn! I cooked it for a longer period of time on low heat, stirring occasionally. Be careful not to break up the meatballs! I served it over fettuccini with cheese bread. Add more Parmesan Cheese and hot pepper flakes if you want. The hot Italian Sausage does make it hot. ***This recipe can be doubled! ***This sauce is great for any kind of pasta dish. It can also be used as a pizza sauce. If using as a pizza sauce, add to the recipe, 1 Tsp. Italian Seasoning!
