  1. Bacon-Wrapped Tater Tots With Cheese & Jalapeno Peppers: ***Bacon-Wrapped Tater Tots are a delicious appetizer to prepare for a snack or to bring to parties. The process of making this appetizer is very easy-Tater Tots and a jalapeno slice are wrapped in bacon and then deep-fried. They are then topped with cheese and served with Hidden Valley Ranch Dressing. It does require a little bit of work because you have to wrap all of the Tater Tots individually, but, the end result is delicious. It is best to allow the Tater Tots to thaw a little out of the freezer so that you can easily slide a toothpick through them. You may not need the entire bag of Tater Tots, so I would recommend taking out a few at a time and setting them aside to prevent contamination. The same thing goes for the pickled jalapenos. If you are looking for a great tasting appetizer for game day, give this one a try. 1-(32-oz.)-Bag Frozen Tater Tots 12-oz.s Bacon-(Each Slice Cut In Half) 16-ozs. Pickled Jalapeno Peppers, Sliced 1 Cup Colby-Jack Cheese 1/2 Cup Hidden Valley Ranch Dressing Toothpicks Defrost the Tater Tots to allow the toothpicks to go through. Hold a jalapeno slice around a Tater Tot and then wrap 1/2 slice of bacon around and secure it together with a toothpick. Repeat until all of the bacon is used up. Heat oil in a deep-fat fryer to 375 degrees. Deep fry Tater Tots in batches for 3-4 minutes or until brown and crispy looking. Drain on paper towel-lined plate. Repeat until all of the Tater Tots have been fried. Immediately sprinkle with Colby-Jack Cheese-(you can microwave them a little so that the cheese melts better)-and serve with Hidden Valley Ranch Dressing in a bowl off to the side, for dipping.
  2. I made a new potato salad recipe yesterday and we really liked it, it is easy to make. I didn't think to put paprika on it though until today so the pic is without it. I did sprinkle some on today as I think it adds to it. Bacon Ranch Potato Salad: 1/2 Bag From A 5-lb. Bag Of Red Potatoes, Cut Into Bite-Size Pieces 2-(16-oz.)-Containers Sour Cream 2 Pkgs. Hidden Valley Ranch Salad & Seasoning Mix 1 Pkg. Bacon, Cooked & Crumbled In Food Processor ***When Bacon Is Done Frying, Put On A Paper-Towel Lined Plate, To Drain Grease Shredded Cheddar Cheese,-(To Taste) Plus Extra For The Top Green Onions, Thinly Sliced-(To Taste) Green Peppers, Diced-(To Taste) Paprika-(Opt.) Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low; cover and simmer until tender, about 20 minutes. Drain potatoes in colander; put in covered large Tupperware container; refrigerate for at least a half hour. When The Potatoes Are Cool, Add The Following To The Potatoes: Sour Cream/Hidden Valley Ranch Mixture/Mix Both In A Small Bowl Shredded Cheddar Cheese Crumbled Bacon Sliced Green Onions Diced Green Peppers Mix well to combine all ingredients. Cover top with shredded cheddar cheese; cover with paprika, if using. Put lid on and refrigerate for at least 2 hours.
  3. Sautéed Ranch Mushrooms: 4 T. Butter-(Half A Stick) 1-lb. Sliced Fresh Mushrooms 1 Packet Hidden Valley Ranch Dressing In a large skillet, melt the butter over medium heat. Add sliced fresh mushrooms and Hidden Valley Ranch Dressing Mix; stir to coat. Cook, stirring frequently, about 30 minutes, until the mushrooms are very tender.
  4. Happy 4th Of July Everyone:) I Hope You All Have Fun & Safe I haven't made this, I heard it was really good. Corn On The Cob: 1 Gallon Water 1 Quart Milk 4 T. Butter 2 T. Sugar 1 Tsp. Salt 1 Tsp. Red Pepper Flakes-(Opt.) 12 Ears Fresh Corn, Shucked & Silk Removed Butter Or Your Favorite Condiments Place the water, milk, butter, sugar, salt and red pepper flakes-(if using)-in a large heavy pot and bring to a rolling boil over high heat. Add the corn, reduce the heat to a simmer, cover and cook until tender, about 5-8 minutes. Remove the pot from the heat and let stand until needed. Drain and serve hot, either plain or with butter or your favorite condiments.
  5. I made a different pork chop recipe the other night and it was really good and easy so I thought I would share it with you in case you would like to try it. I am going to make it this way from now on. I used a Season & Serve Tupperware container. I use that container frequently, it makes it easier to cover chicken, etc. with flour. Just put it in the container with flour and spices and shake it to cover the meat you are cooking. I put flour-(enough to cover the pork chop...s)-1 pkg. Hidden Valley Salad Dressing Mix and the pork chops in the container; put the lid on and shook it until the pork chops were well covered. Put just enough oil to cover the bottom of a non-stick pan and heat the oil; put the pork chops in and fry on low heat until they are done. I season the pork chops with pepper while they cooked. The secret to making good pork chops is to cook them for a long time on low heat; don't rush them! Made mashed potatoes, gravy and green beans. I don't like the gravy to be real greasy and I always use this recipe for chicken gravy also. Once the pork chops are done, put them on a paper-towel lined plate to absorb any grease . Put a large round colander over a large bowl and pour the grease and any bits that are in the skillet. Take 4 T. grease in the skillet that the pork chops were fried it and put 4 T. flour in; whisk thoroughly. Add 2 cups milk, salt and pepper-(to taste)- and whisk thoroughly. Cook until the gravy is at desired thickness; keep whisking and it will thicken up, just give it some time. I prefer to make mashed potatoes with whipping cream instead of milk if I have it on hand. It makes the mashed potatoes richer. I didn't have any whipping cream so I just used milk, butter, salt and pepper.
  6. Ham Gravy: This ham gravy was really good. Ham, Mashed Potatoes, Broccoli With Cheese & Rolls Shown In Picture. Bake the ham on a rack in the roaster and bake it according to pkg. directions. When the ham is done baking, put it on a serving tray and cover it with aluminum foil while you make the gravy. Ham Cooking Juices 1 Stick Butter 1/2 Cup All-Purpose Flour, More Or Less To Taste 4-6 Cups Whole Milk ****I Used 4 Cups Salt & Ground Black Pepper After the ham is done baking, remove it from the oven and pour the juices in a bowl. It will look like their isn't enough juice, but, there is. Put the ham on a large platter and cover it with aluminum foil while you make the gravy. In a skillet, pour the ham juices and add the butter. Once the butter is melted, add 1/4 cup of the flour and whisk to combine. I used 1/4 cup flour pus 2 tablespoons. Continue adding flour, whisking constantly, until a smooth paste is achieved. Cook the roux over a medium heat until you get a nice deep golden color, about 3 minutes. Add the milk, whisking the whole time to prevent lumps forming. Cook until thick and season, to taste. Serve over mashed potatoes.

I wonder what the prize will be tonight for the couples who won't go home empty handed, if they don't win. The winning couple always gets a nice vacation and the other couples get either a coffeemaker, Cuisinart cookware, dancing lessons or Omaha Steaks. Well, whatever the prize is, it isn't way as much as the vacation that the winning couple gets. Anyone care to bet me what the prize will be for the couples who don't win??? haha They got me watching it just so I can laugh when they announce what the runner-ups get...maybe I should take up a different hobby:)

  10. I made this last night and we really liked it. Deep-Fried Fish: I used cod fish, but, you can use your favorite fish. Put the fish in a strainer and wash it off real good with cold water. Put the fish in a dish and cut it into pieces so it will fit your deep-fat fryer. Pour milk over the fish to cover and refrigerate until ready to fry. When ready to fry, put oil in your deep-fat fryer and heat the oil according to your deep-fryer directions. When ready to fry, put the fish on a plate and cover it with Louisiana Cajun Seasoning. ***Waning: Louisiana Cajun Seasoning is spicy, but, we like spicy food. Put the oil in the deep-fat fryer and let it heat up according to the directions. Put the fish in the basket and deep-fry it according to your deep-fryer directions. Serve with Tartar Sauce/sliced lemons/ chopped green onions.
  11. This recipe comes from a good friend of mine, she is a great cook. Chicken & Rice: 4 Cups Cooked Chicken, Diced... 3 Cups Chicken Broth 8-ozs. Sour Cream 2 Cups Minute Rice 2 Cans Cream Of Soups/Chicken Or Mushroom Or Both 1 Medium Sauteed Onion-(Opt.) 2 Tubes Crushed Ritz Crackers 1 Stick Melted Butter-(1/4 lb.) Cook the chicken; when cooked, debone and dice. Mix with the chicken broth, rice, soups and sour cream. Add sauteed onions, if using; mix well. Place in a greased 9x13-in. casserole. Bake at 350 degrees for 20 minutes. Meanwhile, melt the butter and add to the crushed Ritz crackers; mix. After 20 minutes, sprinkle over the partially cooked casserole. Bake an additional 15 minutes, until crackers are browned and casserole is bubbly.
  12. This roast is my favorite roast to make. You can substitute steak seasoning for the Lipton's Secrets, but, I prefer the Lipton's Secrets. You could probably use both, but, I think it would take away the flavor of the roast. I prefer a chuck roast, they are more tender. In a skillet, add some Olive Oil and turn the burner on low. Flour the chuck roast on both sides and lightly brown on both sides. While browning the chuck roast, season the roast with Paula Deen's House Seasoning and pepper, to taste. While the chuck roast is browning, slice up onions and separate some garlic cloves-(to taste). Put potatoes, 1 pkg. baby carrots, 1 pkg. fresh sliced mushrooms, onions and garlic cloves on the bottom of the roaster. Pour 3 cans Campbell's Beef Broth over the veggies; put the rack in the roaster. When the chuck roast is lightly brown on both sides, put on a plate and cover the top and bottom with Christopher Ranch Garlic In A Jar-(to taste). Put the chuck roast on the rack and sprinkle the top of it with Lipton's Recipe Secrets Beefy Onion Soup or your favorite. Put the lid on the roaster and bake at 220 degrees all day. Gravy: Melt 1/2 cup butter slowly in skillet and add 1/2 cup flour; whisk well! I take a baster to get the beef broth in and then I add the beef broth to the butter/flour mixture in the skillet; whisk. Add kitchen bouquet and milk, to taste; season gravy with salt and pepper, whisk. ***When I make mashed potatoes, I make them separately so the potatoes aren't brown!
