  2. I haven't made this, but am going to. When I make it, I will make refried beans and Mexican rice to go with it; maybe cheesebread. Will have sour cream, guacamole and salsa off to the side. This recipe came from a great cook:) Pork Carnitas: 1 Large Pork Butt, Cut Into Chunks With Bones 1 Large Onion, Quartered 1 Large Bell Pepper, Quartered 1 Head Garlic, Peeled 2 Limes, Halved 5 Chipotles Plus 3 T. Adobo Sauce 1 T. Cumin 1 Tsp. Dried Basil 1 Tsp. Dried Oregano 1 Large Bunch Fresh Cilantro 1 T. Salt 2-3 Quarts Low Sodium Chicken Broth Bring to boil, reduce heat to medium-low, cook 3 hours or until meat falls off bones. Remove meat with slotted spoon. When ready to eat, place chunks of meat onto baking sheets with sides, -drizzle with a little olive oil and bake 350 degrees for about 15 minutes or until edges crisp up. Serve on hot tortillas, with cheese, salsa, guacamole or what ever you like. Do not discard cooking liquid. Make carnita gravy with it. Remove bones and lime halves, Turn heat up to medium high, and reduce liquid until it is a thick paste. Mash any chunks of meat that remain. Once thickened, you can mix 1-2 Tablespoons into hot rice and serve as a side with carnitas or any other Mexican dish you like.

Potato Cakes: 2 Cups Mashed Potatoes ***I Boiled The Potatoes, Put In A Mixing Bowl, Added Butter & Milk; Mashed 1 Cup All-Purpose Flour Green Onions, Diced ***Recipe Called For 1 Onion, Diced, But, I Used Green Onions Instead-(4 Or 5) 1 Egg ***I Might Use 2 Eggs Next Time Paula Deen's House Seasoning, To Taste Ground Black Pepper, To Taste Vegetable Oil, Just Enough To Slightly Cover The Bottom Of The Pan ***Recipe Called For 1/2 Cup, But, That Is Way Too Much Oil! 1 Pkg. Hidden Valley Salad Dressing Mix Mix mashed potatoes, flour, green onions, egg, ground black pepper, Paula Deen's House Seasoning in a bowl until batter consistency. Heat vegetable oil in a skillet over medium heat. Form the potato mixture into potato cakes. *** I used an ice cream scoop to form the potato cakes. Drop potato cakes into hot oil. Cook until the potato cakes are golden brown, about 6 minutes per side; see note on bottom! Remove with a slotted spoon and drain on a paper towel-lined plate. Repeat with remaining batter. ***I sprayed a spatula with non-stick spray when turning them over. However, next time I will continue to use an ice cream scoop, but, will wet my hands and place a scoop of the mixture onto my wet hand and then gently flatten them into patties. Spray spatula with non-stick cooking spray to turn the potato cakes over. The next time I make these, I will prepare them ahead of time and refrigerate them for a few hours; then form them into patties. That way they shouldn't be as hard to form into patties and not stick so much. Paula Deen's House Seasoning: 1 Cup Salt 1/4 Cup Black Pepper 1/4 Cup Garlic Powder Mix ingredients in a bowl and store in an airtight container for up to 6 months. ***I Put It In A Shaker For Convenience Such As An Empty Parmesan Cheese Shaker. ***OPT.   4. We just got back from eating at a Mexican restaurant that we had never ate at before. We had pork chile verdes and they were fantastic. Now I am on a mission to find a recipe to make them at home. Yes, I don't cook all the time:) I like to go out and eat too:) as long as the restaurant gets good reviews and this restaurant had a lot of great reviews. Anyway, while looking for a recipe to make them, I ran across this site that has pictures so thought I would share it with you.   6. Laughing:) No we don't do that stuff, but, there was a guy who was a few rows down from us smoking pot like crazy. I kept thinking he is going to fall over the rail if he doesn't calm down. He was real high. Then after the concert, there was a train outside that wouldn't move and there were a lot of people wanting to get across the tracks. It finally started moving after a half hour or so then it stopped again! We saw an elevator and decided to take that so we could finally get out of there. The elevator was packed, and I said to everyone..."The train took longer than the concert" and everyone in that elevator started laughing so they must of had some of that stuff too lol Finally made it home and drank beer and got to bed at 2 or 3 a.m. Anyway, I will try posting those videos later. I managed to figure out how to post them on facebook yesterday so maybe I am not completely brain dead:)
  7. Fleetwood Mac was awesome last night. They had a couple of songs that we wished they would of sang, but, they have so many good songs that they couldn't sing all of them. They talked to the audience and told some stories which made it even more fun. We were high up in the stands but they had screens all over the place to get a closer look. We got some videos and I would share them with you all but I am not sure how to do it. Maybe tomorrow I can figure it out, was a long night for us. Didn't want you to think I forgot you all, will try again tomorrow when I am not so tired.
  8. I haven't made this. The person who made this said it was the best salmon they have ever made. Grilled Salmon Steaks: 6 Salmon Steaks 1/2 Cup Salad Oil 1/4 Cup Vinegar 1/4 Cup Lemon Juice 2 T. Onion, Grated With The Juice 1/2 Tsp. Dry Mustard 1/4 Tsp. Salt Combine the ingredients and pour over the fish steaks. Use a shallow pan. Refrigerate for at least 4 to 5 hours and turn fish each hour. When ready to cook, drain off the marinade and save the marinade. Place the steaks on a well greased rack at medium height over your cooking coals. Cook until lightly browned, about 5 to 6 minutes, then baste with the marinade and turn. Grill fish until done.

I'm sorry I haven't posted recipes lately, I haven't been feeling well, I am better today though. I am glad I feel better because tomorrow night we have tickets to see Fleetwood Mac:) I would hate to miss that concert. I will post pictures of the concert if we get good ones.   11. Easter Cupcakes: My grandma/mom and I made these for Easter. I had forgotten to put the picture in for the Butterscotch/Chocolate Chip cookies, just added it if anyone was wondering where it was at. For The Cupcakes: 1 Box Pillsbury White Cake Mix Or Your Favorite Cake Mix For The Frosting: Butter/Powdered Sugar/Milk/Vanilla Extract ***I Just Eyeball The Butter, Powdered Sugar/Milk/Vanilla Extract Until It Is At The Consistency I Want. For The Toppings: 1 Cup Shredded Sweetened Coconut Green Food Coloring –(about 15 drops) Jelly Beans Candy Decorations Make cake mix for cupcakes using ingredients listed on box and bake according to pkg. directions. For The Frosting: Add the powdered sugar, butter, vanilla extract, and milk to a medium-size bowl. Set the mixer to the slowest speed and beat the ingredients very carefully so that the powdered sugar doesn’t fly out of the bowl. Once the powdered sugar starts to mix in with the butter and milk-(about two minutes), then increase the speed on the mixer and beat the ingredients until smooth-(about another 3 or 4 minutes.) For The Toppings: Add the shredded coconut to a small bowl. Next add the drops of green food coloring and mix it into the shredded coconut. If you prefer that the coconut be a bit darker, feel free to add a few more drops of the food coloring. Before frosting the cupcakes, push a jelly bean into the top of the cupcake down about an inch. Frost The Cupcakes. Right after frosting the cupcakes, add the colored shredded coconut, jelly beans and decorative candies on top of the cupcake.

Potatoes: 1-(32-oz.)-Bag Ore Ida Frozen Hashbrowns 1 Can Cream Of Chicken Soup 1-(16-oz.)-Container Sour Cream 1-(8-oz.)-Bag Shredded Cheddar Cheese 1 Onion, Chopped 1/2 Stick Blue Bonnet Margarine, Melted Salt Or Garlic Salt & Pepper, To Taste Topping: 3-4 Cups Crushed Corn Flakes 1/2 Stick Butter, Melted Mix potato ingredients together in a large bowl and put into a greased 13x9-in. baking dish. Top with crushed cornflakes and drizzle with melted butter. Bake at 375 degrees for 1 hour.
  13. Why wait for Thanksgiving to have turkey? I didn't make everything like I do at Thanksgiving time. We like to have it now and then. I made it with broccoli and cheese sauce, mashed potatoes and gravy and cheesebread. Turkey: Butterball Turkey Christopher Ranch Crushed Garlic In A Jar Blue Bonnet Soft Butter In A Tub Pepper White Onions, Sliced Pkg. Of Baby Carrots Celery, Sliced In Chunks 32-oz. Can Swanson's Chicken Broth Zatarain's Creole Seasoning Take package out of turkey cavity. Thoroughly wash turkey under cold water; pat dry with a paper towel. Rub some Soft Blue Bonnet Margarine inside of the turkey cavity. Sprinkle some Zatarain's Creole Seasoning and Christopher Ranch Crushed Garlic In A Jar inside of the cavity. LIft up the turkey skin as far as you can. Using a spoon, put some Soft Blue Bonnet Margarine under the skin and all over the turkey; DON'T BE SKIMPY! Sprinkle Zaratrain's Creole Seasoning and Christopher Ranch Crushed Garlic In A Jar in the turkey cavity and all over the turkey, DON'T BE SKIMPY! Put the rest of the baby carrots in the bottom of the roasting pan along with thick slices of celery; add some sliced white onions and Christopher Ranch Crushed Garlic In A Jar. Put the turkey on a rack and roast according to package directions. Using a baster, baste the turkey with juices now and then. To Make The Gravy: I put a strainer over a large bowl to catch the veggies. The veggies stay in the strainer and the broth goes into the bowl. Turkey Gravy: 1/2 Cup Blue Bonnet Margarine 1/2 Cup All-Purpose Flour 2 Cups Degreased Turkey Broth 1 Can Swanson's Chicken Broth ***I eyeball the broth, etc. until it is at the thickness we like. Cut 1/2 cup Blue Bonnet Margarine into slices; put in medium-sized skillet. On low heat, melt margarine until it is foamy; 6-12 minutes. Add 1/2 cup all-purpose flour; stir with a whisk until it is well blended-(6-12 minutes.) Add turkey broth and chicken broth; whisk and season with salt and pepper. ****Add some milk or whipping cream if you need to.
  14. I Served This With Cheese Bread/Green Beans/Gravy & Chocolate Chip Raisin Oatmeal Cookies. The gravy isn't shown so you can see the picture better. Roast Beef: Chuck Roast ***I Will Only Use Chuck Roast 1 Pkg. Baby Carrots-(Opt.) Potatoes, Peeled & Cut In Half If Using Russet Potatoes ***If Using Idaho Gold Potatoes Cut In Half/Leave Peels On ***If Making Mashed Potatoes, Use Russet Potatoes & Make Separately Because The Potatoes Get Brown When Roasting Onions, Sliced-(To Taste) Garlic Cloves-(To Taste Sliced Fresh Mushrooms 2 Or 3 Cans Beef Broth Your Favorite Steak Seasoning ***I Use Omaha Steak Seasoning Or A1 Dry Rub Bold Original Christopher Ranch Chopped Garlic In A Jar Lipton Onion Soup Mix Or Lipton Onion/Mushroom Soup Mix Preheat oven to 220 degrees. Heat Olive Oil in large non-stick skillet. Pat flour all over the chuck roast and season it all over with Paula Deen's House Seasoning and pepper. Paula Deen's House Seasoning: 1 Cup Salt 1/4 Cup Black Pepper 1/4 Cup Garlic Powder. Mix ingredients together in a bowl; put in a shaker by the stove for convenience. When the chuck roast is lightly brown on both sides, put on a paper towel-lined plate. Put sliced fresh mushrooms, baby carrots, onions, garlic and potatoes in bottom of roasting pan; pour beef broth over. Sprinkle Christopher Ranch Chopped Garlic In A Jar/ Steak Seasoning and Lipton Seasoning all over the chuck roast. ***I Used A Baster To Put Some Beef Broth Over The Lipton Seasoning. Put the chuck roast on roasting rack and put the roasting pan lid on; put in preheated 220 degree oven. Bake at 220 degrees all day. Gravy: Take the chuck roast out of roasting pan. Put the broth and vegetables in a strainer and put the strainer over a large bowl. The veggies will stay in the strainer and the broth will go into the bowl. It makes it easier to put the broth in the pan when making the gravy. Melt 1/2 cup Blue Bonnet Margarine in skillet. Gradually add 1/2 cup flour. Using a whisk, stir constantly until flour is combined with butter. Gradually add beef broth to the butter and flour mixture until the gravy is at the right consistency and gravy is smooth; whisk while adding beef broth. Add Kitchen Bouquet-(if necessary to get the color of gravy you want)-and milk or whipping cream if you need it. Season gravy with salt and pepper. Mashed Potatoes: Peel amount of potatoes you need; cut in half. Boil until tender-(about 30 minutes.) Drain potatoes in strainer; put in mixing bowl. Add butter, salt, pepper, milk or whipping cream, to get the consistency you want; mix.

  17. I made this for the first time last night and we really liked them. I forgot to take a picture of them though. I will take a pic the next time I make them. I had the potatoes peeled before I was told about this recipe. It wouldn't matter if the skins were on or off. Garlic & Parmesan Cheese Mashed Potatoes: 2-1/2 lbs. Red Potatoes, Unpeeled & Quartered ***You Can Peel Potato Skins 3 Garlic Cloves, Peeled & Minced 2 T. Butter 1/2 Cup Milk Salt & Pepper, To Taste 1/4 Cup Kraft Parmesan Cheese In A Can Put potatoes and garlic in pan. Cover with water; bring to a boil. Reduce heat and simmer for 25 minutes until potatoes are tender; drain well. Put potatoes in mixing bowl and mash with butter, milk, salt, pepper and Parmesan Cheese.

  22. I saw this on a tv show and decided to try it and it helps me a lot. Take a wired hanger and using a clothespin, pin the recipe you are going to make to the wired hanger. It will keep the recipe from getting all messy on the counter. I hang the hanger on the kitchen cupboard knob right where I am cooking. If you have room in your kitchen, you could also just pin the recipe on a bulletin board. I have a filing cabinet to keep my recipes in and I have them categorized. Recipes I use a lot, I keep in the kitchen cupboard right above the counter so all I have to do is grab it and clothespin it on the hanger. I also use a wired hanger and a clothespin to hang up a grocery list. There are times when I am cooking and see that I am almost out of the stuff that I use to make it so I get a piece of paper and write it down and hang it on the hanger. That way when you get home from the grocery store, you won't be saying to yourself-"I forgot to buy this!" I also use a hanger to clip coupons by my grocery list. That way everything is right together. I keep coupons in a folder for restaurants and fast food places also.

  24. Superbowl Chicken Wings: 3 Eggs 1 Cup Hot Sauce ***I Used Frank's Red Hot Wing Sauce ***Or Your Favorite Hot Sauce 2 Cups Self-Rising Flour 2-1/2 lbs. Chicken Wings ***I Used Party Chicken Wings Paula Deen's House Seasoning Heat oil in deep-fat fryer according to directions. In a medium bowl, beat the eggs; add 1 cup Frank's Red Hot Wing Sauce. Season chicken with Paula Deen's House Seasoning. Dip the chicken wings in the egg and then coat well in the flour. Place the chicken wings in the preheated oil and fry the chicken wings until brown and crisp-(8-14 minutes)-until they are crisp enough to your liking. Serve with homemade Hidden Valley Ranch Dressing/Blue Cheese Dressing/Carrot Sticks/Celery Sticks-(Opt.)
