  1. Knorr's Spinach Dip: 1 package frozen spinach, chopped, drained 1 cup sour cream 1 cup Hellman's mayonnaise 1 package Knorr vegetable soup mix 1 onion, diced 1 can water chestnuts, chopped Combine all ingredients. Refrigerate overnight for flavors to meld. Serve with Triscuit/Sociables.
  2. Knorr's Spnach Dip & Crackers: 1-(10-oz.) Pkg. Frozen Chopped Spinach, Thawed-(Don’t Use Fresh) 1-1/2 Cups Sour Cream 1 Cup Hellman’s Mayonnaise 1-(14-oz.) Pkg. Knorr Vegetable Soup Mix 1-(8-oz.) Can Water Chestnuts, Finely Chopped 3 Green Onions, Finely Chopped Round Loaf King’s Hawaiian Bread Or Your Bread Round Loaf Squeeze spinach until dry. In medium bowl, stir together spinach, sour cream and soup mix. Add finely chopped water chestnuts and green onions. Cover and refrigerate 2 hours or overnight. Cut slice from top of round loaf of pumpernickel bread, hollow out loaf to leave shell to contain dip. Use bread removed from shell and top slice to cut into bite size pieces. Butter inside of bread shell, fill loaf with dip and place on platter and surround with crackers and/or vegetable sticks
  3. Crockpot Roast Beef: 1 BEEF ROAST-(I ONLY USE CHUCK ROAST-THE FLAT KIND..THEY ARE MORE TENDER) 1 PKG. HIDDEN VALLEY RANCH DRESSING MIX 1 PKG. BROWN GRAVY MIX 1 PKG. ITALIAN DRESSING MIX 1/2 CUP WATER-(I USE 1 Can BEEF BROTH) COMBINE MIXES WELL AND SPRINNKLE OVER ROAST IN CROCKPOT. POUR WATER OR BEEF BROTH AROUND ROAST. COOK ON LOW ALL DAY-(AT LEASTG 6-7 HOURS)-I COOK IT EARY IN THE MORNING AND WE DON’T EAT UNTIL 8 OR SO AT NIGHT. ****I PUT SLICED FRESH MUSHROOMS AND BABY CARROTS ON THE BOTTOM OF THE CROCKPOT WITH GARLIC AND ONIONS. YOU CAN PUT POTATOES IN ALSO…IF I AM MAKING MASHED POTATOES…I COOK THE POTATOES SEPERATELY SO THEY DON’T TURN BROWN. GRAVY: MIX 4 T. FLOUR WITH 1 CUP MILK USING A WHISK. POUR THE BEEF BROTH FROM THE CROCKPOT IN A SAUCE Pan. LET IT GET HOT AND THEN ADD THE FLOUR AND MILK MIXTURE TO IT. ***USE A WHISK TO GET IT SMOOTH. ADD KITCHEN BOUQUET TO TASTE-(HOW BROWN YOU WANT THE GRAVY)-STIR.
  4. We don't care for sweet potatos so I can't vouch for this recipe. I just heard it was good if you like to make sweet potatoes for Thanksgiving. Sweet Potato Bake: 1 40-oz. can sweet potato 3/4 c. white sugar 1/2 c. melted butter 2 eggs, beaten 1/2 t. cinnamon 1 t. vanilla Topping 1 c. brown sugar 1/3 c. flour 1/3 c. melted butter 1 cup chopped nuts Preheat oven to 350º. Drain and mash sweet potatoes. Add all ingredients except topping. Mix thoroughly. Spread in a 9x13 baking dish. Crumble together topping ingredients. Sprinkle over sweet potatoes. Bake for 30 minutes.
  5. This is tried and true and it is the only dressing I will make for Thanksgiving. Sausage Cornbread Dressing: 2 Pkg.s Sliced Fresh Mushrooms Celery, Sliced-To Taste Chopped Onion & Garlic-To Taste 1 Cup Blue Bonnet Margarine 4 Chicken Bouilon Cubes 4 Cups Boiling Water 2 lbs. Farmer John's Hot Sausage 2 Boxes Marie Callender Cornbread Dressing Mix 3 Tsp. Poultry Seasoning Fry sausage; drain. In large skillet, cook mushrooms, celery, onion and garlic in butter until tender. In large mixing bowl, dissolve chicken bouillon in boiling water. Add sausage and mushroom mixture, Marie Callendar's Cornbread Dressing Mix and Poultry Seasoning; mix until all ingredients are combined. Loosely stuff turkey, just before roasting. ***You won't be able to put all the stuffing in the turkey-you just want it loosely packed inside of the turkey. Put remaining stuffing in a greased baking dish in the refrigerator until the turkey is done roasting. When the turkey is done roasting, take the turkey out and let it sit for 30 minutes. Take the remaining stuffing out of the refrigerator and bake at 350 degrees for 30 minutes.
  6. Since Thanksgiving will be here soon, I will try and post Thanksgiving recipes. This is a tried and true gravy recipe and it is really good. Adjust amount of ingredients-double if necessary if you are feeding alot of people. Turkey Gravy: 1/2 Cup Butter Or Margarine-I Use Blue Bonnet 1/2 Cup All-Purpose Flour 4 Cups Chickien Broth Or Degreased Turkey Broth 1/3 Cup Heavy Cream Salt & Pepper To Taste Making The Roux: Cut 1/2 Cup-(8-T.) butter or margarine into chunks and add it to a medium-size heavy saucepan. On low to medium-low temperature, melt the butter until it is foamy. Add 1/2 cup All-Purpose White Flour to the saucepan. Start whiskig the flour until well-blended. Keep whisking and cooking over very low heat until it smells lie a pie cooking in the oven! That means the flour is cooked and your gravy will not end up having a "pasty" flavor to it. ***This could take anywhere from 6-12 minutes to ger cooked! Start by whisking in about 1 cup of chicken or degreased turkey broth. Four cups will eventually get added. Keep whisking vigorousoy until all the stock is again absorbed. Now add a little bit more stock...whisking until the stock is again absorbed! Pour in the remaining stock---keep whisking!! All of the stock will get absorbed and it will be smooth as silk again! The stove should still be set at low as you continue to cook the gravy. At about 12 minutes, add 1/3 cup Half-and-Half. This adds a rich flavor and tecture to the final gravy. Within 2 minutes of adding the Half-and-Half, the gravy is perfect! Add salt and pepper to taste to the gravy. Mashed Potatoes: Boil how many potatoes you will need to feed everyone. Drain potatoes when done and put in a large mixing bowl. Add butter or margearine, salt and pepper to taste. Add WHIPPPING CREAM-THAT IS SO MUCH BETTER THAN USING MILK-TO GET IT AT THE CONSISTENCY YOU WANT; MIX UNTIL POTATOES ARE SMOOTH Put in serving bowl.
  7. Loaded Potato Skins: 6 Small To Medium-Sized Russet Baking Potatoes-(Total 3 lbs.) Olive Oil Canola Oil Kosher Salt Freshly Ground Black Pepper 6 Strips Bacon 4-oz.s Grated Cheddar Cheese 1/2 Cup Sour Cream 2 Green Onions, Thinly Sliced, Including The Greens Of The Onions Scrub the potatoes clean then bake the potatoes using your favorite method, either oven or microwave. If using an oven, rub with Olive Oil and bake in a 400 degree oven for about an hour until the potatoes are cooked through and give a little when pressed. If using a microwave, rub all over with Olive Oil and cook on the high setting for about 5 minutes per potato. ***Baking the potatoes in a conventional oven yields potatoes that are easier to work with (cut and scoop out), the potato seems to adhere to the skins a little better, but there is hardly a discernible difference in the final product. While the potatoes are cooking, cook the bacon strips in a frying pan on medium low heat for 10 to 15 minutes, or until crisp. Drain on paper towels. Let cool. Crumble. Remove the potatoes from the oven and let cool enough to handle. Cut in half horizontally. Use a spoon to carefully scoop out the insides, reserving the scooped potatoes for another use, leaving about 1/4 of an inch of potato on the skin. Increase the heat of the oven to 450°F. Brush or rub Canola Oil all over the potato skins, outside and in. Sprinkle with Kosher Salt. Place on a baking rack in a roasting pan (don't use a cookie sheet, it will warp, use a roasting pan or broiler pan that can take the heat). Cook for 10 minutes on one side, then flip the skins over and cook for another 10 minutes. Remove from oven and let cool enough to handle. Arrange the potato skins skin-side down on the roasting pan or rack. Sprinkle the insides with freshly Ground Black Pepper, Cheddar Cheese, and crumbled Bacon. Return to the oven. Broil for an additional 2 minutes, or until the cheese is bubbly. Remove from oven. Use tongs to place skins on a serving plate. Add a dollop of Sour Cream to each skin, sprinkle with Green Onions.
  8. Hot Wing Sauce: 1-1/2 Cups Butter, Melted 1/2 Cup Tabasco Sauce, Plus 2 T. Tabasco Sauce 3 T. Light Brown Sugar 3/4 Tsp. Paprika 3/4 Tsp. Balsamic Vinegar 3/8 Tsp. Cayenne Pepper 2 T. Chili Sauce Mix all the ingredients together, very well. Dunk, Dip Or Soak Your Cooked Wings In Sauce.

Crab Stuffed Mushrooms: 1/2 Cup Boursin Cheese 1/2 Cup Finely Minced Crab Meat-(Can Use Imitation) 18 Uniform-Sized Mushrooms, Stems Removed 1 Box Phyllo Pastry-(You Will Need At Least 18 Sheets) 1/3 Cup Butter, Melted Salt & Freshly Ground Black Pepper, To Taste 1 Egg, Beaten Preheat oven to 400 degrees. Combine cheese and crab in a small bowl. Divide crab mixture among the upside-down mushroom caps, stuffing the mushrooms. Carefully lay 6 sheets of Phyllo Dough on top of one another, brushing every other sheet with melted butter. Cut Phyllo lengthwise down the center and then cut each half into 3 pieces to make 6 rectangles. Place a mushroom, cheese side up, in the center of each square. Season with salt and pepper. Lift sides of pastry over mushrooms to resemble small bundles and form a "neck," pinching edges together to seal. Repeat the entire procedure 2 more times. Place on a greased baking sheet and brush with beaten egg. Bake for about 15 minutes until pastry is crisp and golden. Serve hot.

  11. Tortilla Roll-Ups: 1-(8-oz.) Pkg. Cream Cheese, Softened 1 Cup Sour Cream 1-(1-oz.) Pkg. Dry Fiesta-Style Ranch Dressing Mix 1 Cup Chunky Salsa 1-1/2 Cups Shredded Cheddar Cheese 10-(10-in.) Flour Tortillas In a medium bowl, mix the Cream Cheese, Sour Cream, Fiesta-Style Ranch Dressing Mix, Chunky Salsa and Cheddar Cheese. Spread even amounts of the mixture onto the Flour Tortillas. Roll Flour Tortillas and chill in the refrigerator until ready to serve. To serve, slice the chilled, rolled Flour Tortillas into 3/4 in. slices and arrange on a large serving platter.
  12. This is a quick and good appetizer for a football game: Bacon Wrapped Lil Smokies: 1 lb. Sliced Bacon, Cut Into Thirds 1-(14-oz.) Pkg. Beef Cocktail Wieners 3/4 Cup Brown Sugar, Or To Taste Preheat the oven to 325 degrees. Refrigerate 2/3 of the bacon until needed. It is easier to wrap the wieners with cold bacon. Wrap each cocktail wiener with a piece of bacon and secure with a toothpick. Place on a large baking sheet. Sprinkle brown sugar generously over all. Bake for 40 minutes in the preheated oven, until the sugar is bubbly. To serve, place the wieners in a slow cooker and keep on the low setting.

  14. Tortilla Chip Appetizer: 1 lb. Spicy Italian Sausage 1 Can Refried Beans 1-(8-oz.) Jar Medium Salsa 2 Cups Shredded Cheddar Cheese 2 Cups Shredded Monterey Jack Cheese 1-(4-oz.) Jar Sliced Black Olives 1 Cup Sliced Green Onions With Tops 2 Cups Sour Cream Preheat oven to 350. Crumble sausage into medium skillet. Cook over medium heat until browned stirring occasionally. Drain off any drippings. Spread beans in ungreased 2-1/2 quart shallow baking dish, then top with sausage. Pour salsa over sausage; sprinkle with cheese. Sprinkle olives and onions over top. Bake 20 to 30 minutes or until heated through. Spread with sour cream while hot and serve on Tortilla Chips.

Grilled Avocado Quesadillas: 4 Flour Tortillas 1 Avocado 2 Scallions, Chopped 1/2 Cup Grated Monterey Jack Cheese 1 Jalapeno Pepper, Seeded & Coarsely Chopped 2 Cups Salsa 1 Cup Sour Cream Prepare a bed of coals or preheat the gas grill. Remove the avocado from the skin, mash and spread over two of the Flour Tortillas. Sprinkle the scallions, Monterey Jack Cheese and Jalapeño over the avocado. Cover each with a Flour Tortilla. Place on the grill and cook for two minutes. Carefully turn and cook for two more minutes. Cut each Quesadilla into pieces and serve with your favorite Salsa.
  17. Taco Dip 1 lb,.Hamburger 1 lb. Jimmy Dean Hot Sausage 1/2 Green Pepper, Chopped Fine 1/2 Onion, Chopped Fine 1 Large Can Refried Beans 1 Pkg. Monterey Jack With Jalepeno Peppers-Not Shredded 1 Pkg. Taco Seasonning Brown hamburger, sausage, onion and peppers together in a pan;drain. Add Taco Seasoning. Spread beans on bottom of a 9x13 pan. Spread meat and veggies over the beans. Slice cheese into very thin slices and place on top of meat and veggies. Bake at 350 degrees for 30 minutes. Serve with Tortilla Chips or Doritoes/chips of your choice.
  18. I just made those sugar cookies again that I posted...I made them again this morning and this time I made the icing. These are better with icing. I didn't use the colored flavoring or sprinkles..didn't have them. I just used the milk, light corn syrup, powedered sugar and vanilla. I had to double the icing recipe to ice all the cookies. Just thought I would let you know in case you make them.
  19. I am so sorry that they are treating her badly. Tell her that she isn't alone....I have one uncle who talks to me...other than him..noone in my family bothers. The sister who told me that I was mean..wants to talk me one day and then the next day she doesn't and back and forth! I am getting at the point where I have to do what is right for my sanity and not let her treat me that way...I don't want to...but...am so tired of being bounced back and forth. My uncle, who is the only family member who talks to me, told me this..."Anyone who doesn't want to talk to you..it is their problem and not yours!" He is really ticked off at the way they are treating me. Thx for your input..much appreciated:) My other sister..who is a Social Worker..sigh....won't talk to me and my other sister, who I was very close to, died. I have had enough.
  20. I talked to my sister on the phone yesterday...she had me in tears. She told me so many lies and she said that I was a mean person to top it all off. Now if a sibling said that to you..would you just decide not to contact them again or what? Even though she said stuff to hurt me...I told her that I loved her.
