Lemon Cheesecake: 1-1/2 cups graham cracker crumbs 1/3 cup sugar 1/3 cup butter, melted 3 packages-(8-oz.s each) Philadelphia Cream Cheese, softened 1 cup sugar 1 cup sour cream 3 eggs Grated peel and juice from one large lemon Preheat oven to 325º Mix graham cracker crumbs, 1/3 cup sugar and butter , reserve 1/2 cup crumb mixture. Press remaining crumb mixture firmly into the bottom of a 9 inch springform pan. Set aside Beat Cream Cheese and 1 cup sugar on medium speed until well blended. Add sour cream, mix well. Add eggs one at a time just until blended. Stir in lemon juice and peel and pour over crust. Sprinkle with reserved crumb mixture. Bake 45 to 50 minutes until center is almost set. Run a knife around the rim to loosen cake. Cool before removing rim. Refrigerate at least 4 hours or overnight. Store in refrigerator.

PISTACHIO CHEESE CAKE: Layer 1: 1 cup All Purpose Flour 1/2 cup Butter 1/2 cup Walnuts or Pecans (chopped) With pastry cutter, cut butter into flour until the mixture is the size of small peas. then mix in the chopped nuts.Press into a 9 x 13 pan. Bake in preheated 350 degree oven for 15 minute. Cool completely. Layer 2: 8-oz. Regular Cream Cheese (NOT light), softened. 1 Cup Icing Sugar 1 Cup Cool Whip Dessert Topping Cream together Cream Cheese and Icing Sugar. Fold in Cool Whip. Spread carefully onto cooled crust. Layer 3: 2 Pkg.s Instant Pistachio Pudding Mix. 3 Cups Milk 14-oz. Can Crushed Pineapple (Drained Very Well) In a large mixing bowl, add pudding mixes and milk. Beat on low speed for 2 minutes. Fold in well drained pineapple. Spread carefully onto cream cheese layer. Layer 4: 1 Cup Whipping cream 1 Tsp. Vanilla 1 Tsp. White Sugar 1/4 cup Chopped Walnuts or Pecans In a chilled bowl on high speed, whip together cream, vanilla and sugar, until soft peaks form. Spread on top of cake. Sprinkle with the chopped walnuts or pecans REFRIGERATE OVERNIGHT for best results! For a festive touch when serving, garnish each cut piece with a maraschino cherry. Delicious!

The picture below is made with lemons: Lime Squares OR Lemon Squares: 1 cup all-purpose flour 1/2 cup butter, softened 1/4 cup powdered sugar 1 cup granulated sugar 2 eggs 2 tablespoons flour 2 teaspoons lime zest 2 tablespoons lime juice 1/2 teaspoon baking powder 1/4 teaspoon salt 2-3 drops green food coloring Heat oven to 350º Mix flour, butter and powdered sugar. Press into ungreased 8x8x2 or 9x9x2 inch baking pan, building up 1/2 inch edges. Bake 20 minutes. (I baked for 15 min). Beat remaining ingredients until light and fluffy, about 3 minutes, pour over baked layer. Bake until no indentation remains when touched in the center, about 25 minutes. Cool, sprinkle with powdered sugar. Cut into 1 inch squares.

Neapolitan Cheesecake: ***Make this ahead of time and refrigerate for several hours or overnight. 1 cup chocolate wafer crumbs 5 tbsp butter or margarine, melted, divided 3 8oz packages cream cheese, softened 3/4 cup sugar 3 eggs 1 tsp vanilla extract 5 1oz squares semisweet chocolate, divided 2 1/2 squares (2 1/2-oz) white baking chocolate, divided 1/3 cup mashed sweetened strawberries 2 tsp shortening, divided Combine the crumbs with 3 tbsp butter. Press into an ungreased 9-inch springform pan. Bake at 350*F for 8 minutes; cool. In a mixing bowl, beat the cream cheese and sugar until smooth Beat in eggs, one at a time. Add the vanilla. Divide into 3 portions, about 1 2/3-cups each. Melt 2 squares semisweet chocolate and stir into 1 portion of the batter. Melt 2 squares of white chocolate and stir into second portion. Stir strawberries into remaining batter. Spread the semisweet mixture evenly over crust. Carefully spread white chocolate mixture on top, and then strawberry mixture. Bake at 425*F for 10 minutes; reduce heat to 300*F. Bake for 50-55 minutes or until center is nearly set. Remove from oven. Run knife around rim to prevent cracking. Cool. Remove from pan. Melt remaining semisweet chocolate, remaining butter and 1-tsp of shortening; cool for 2 minutes. Pour over cake. Melt remaining white chocolate and shortening; drizzle over glaze

California Lemon Pound Cake Recipe: 1 cup butter, softened 1/2 cup shortening 3 cups sugar 5 eggs 1 tablespoon grated lemon peel 1 tablespoon lemon extract 3 cups all-purpose flour 1 teaspoon salt 1/2 teaspoon baking powder 1 cup milk FROSTING: 1/4 cup butter, softened 1-3/4 cups confectioners' sugar 2 tablespoons lemon juice 1 teaspoon grated lemon peel Directions: In a large bowl, cream the butter, shortening and sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition. Stir in lemon peel and extract. Combine the flour, salt and baking powder; gradually add to creamed mixture alternately with milk. Beat just until combined. Pour into a greased 10-in. fluted tube pan. Bake at 350° for 70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. In a small bowl, combine the frosting ingredients; beat until smooth. Spread over top of cake.
  6. My husbands boss's wife is going to enter a cake baking contest and she knew I had alot of recipes..and she asked me if I had any cake recipes for her to enter in the contest. I sent her some cake recipes..she wanted something out of the ordinary...she liked the picture and the recipe and I think she is going to make that cake. Hope she wins the contest:)
  7. OREO & Fudge Ice Cream Cake: 1/2 cup hot fudge ice cream topping, warmed 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided 1 pkg. (4-serving size) JELL-O Chocolate Flavor Instant Pudding & Pie Filling 8 OREO Chocolate Sandwich Cookies, chopped (about 1 cup)-(Person who made this said they would use more) 12 vanilla ice cream sandwiches, unwrapped POUR fudge topping into medium bowl. Add 1 cup of the whipped topping; stir with wire whisk until well blended. Add dry pudding mix; stir 2 min. or until well blended. Gently stir in chopped cookies; set aside. ARRANGE 4 of the ice cream sandwiches, side-by-side, on 24-inch-long piece of foil; top with half of the whipped topping mixture. Repeat layers. Top with remaining 4 ice cream sandwiches. Frost top and sides of dessert with remaining whipped topping. Bring up foil sides. Double fold top and ends to loosely seal packet. FREEZE at least 4 hours before serving. Store leftover dessert in freezer. Note The consistency of fudge topping can vary depending on what brand you purchase. If your fudge topping mixture is too thick to spread easily, stir in 1/4 cup milk. ________________________________________
  8. Being in a relationship there has to be trust if it is going to work. I hope you decide to back off and let her figure it out and don't put your life on hold. He is a control freak by going through her phone meassages and that to me would be a big warning sign! If she thinks it is going to stop there..she is wrong..but that is something she has to figure out on her own. Without going into details about what I went through a very long time ago...she has to be the one to make the decision to leave! No matter how much advice she is getting from friends, etc..she has to be the one to say "enough is enough" and leave. One control thing will lead to another...telling her what time to come home..what friends she can have and not have etc. It isn't fun! She has to figure this out for herself and who knows how long that will take. Date other women..there is someone out there for you...you shouldn't have to put your life on hold! If it is meant to be and you both have talked alot and I mean ALOT..You will be together..let time run its course. A right to be jealous??? for him to go through her phone messages???? and that makes it ok??? That is totally stupid and uncalled for him to do what he did period! She isn't married to the guy and that doesn't make it ok for him to do that! If you are in a relationship..married or not..there has to be trust and most of all...always be best friends:)

  11. Ok..first att was suppose to disconnect our phone line..they messed up and cut our cable..so then we had to wait 2 days for them to fix it. I didn't ever call 911 so have no idea how I got into that mess... Then when this guy came to fix internet..he messed up my outlook. My hon called att and then I had to wait 24 hours for me to use it..sigh. He was rude to me and that didn't help my mood any. Geez..it wasn't my fault they screwed up! So now all is fixed finally...having a few beers...and am venting lol I am going to play some backgammon..haven't played in a few days. I play better when I have beer in me anyway lol Dice love beer:) You get doubles that way:) I wish everyone a fun weekend:) Will be able to post recipes now:) just in case any of you wondered what happened to me:) Anyone care to join me outside for some beers?

  15. Grilled Hot Dogs On A Stick: 10 Wooden Skewers_(10-in.) wooden skewers (10-inches) 16-oz. Pkg. Hot Dogs 1-(11-oz.) Can Refrigerated Soft Breadsticks Preheat greased grill to medium-low heat. 1. Insert a 10-inch wooden skewer into 1 end of each wiener until skewer reaches opposite end of wiener. 2. Wrap exposed end of skewer with aluminum foil. 3. Unroll breadstick dough and separate into strips. 4. Wrap 1 breadstick in a spiral-fashion around each wiener. 5. Place on grill. 6. Grill 8 to 10 min. or until wiener is heated through (160°F) and dough is golden brown, turning frequently. **Can add Cheese in the middle of hotdogs if you want before wrapping.

  17. I haven't made this..found it on the web. I go by looks of a recipe when I cook. I am not sure if I would use just a 1/2 can of Tomato Paste. I would maybe use a whole can or mix some paste up with Tomato Sauce and see how it looked. Taco Pizza: 1 Mama Mary's All-Ready Thin Pizza Crust from Walmart 1 Can Refried Beans 1 lb. Ground Beef 1 Pkg. Taco Bell Or Oretaga Taco Seasoning Mix 1/2 Small Can Tomato Paste 1-(8-oz.) Bag Shredded Cheddar Cheese 1-(8-oz.) Bag Mexican Blend Cheese Shredded Lettuce Chopped Tomatoes To Taste Diced Green Onions To Taste Small Can Black Olives Prepare ground beef as you would for Tacos {brown beef/drain, add seasoning, tomato paste & 3/4 cup water, simmer 10 minutes} Spread Refried Beans onto crust, Spread the Taco Meat and Shredded Cheddar Cheese Bake at 350-400 degrees until crust is brown and cheese is bubbly. Take out of oven add: Shredded lettuce Tomatoes Green Onions Black Olives Shredded Mexican Blend Cheese serve slices with Picante Sauce or Taco Sauce, Jalapenos and Sour Cream.
  18. KNORR'S BACK OF PKG. SPINACH DIP: 10-oz. Pkg. Frozen Chopped Spinach, Thawed & Drained 16-oz. Carton Sour Cream 1 Cup Mayonnaise 1 Pkg. Knorr Vegetable Soup & Dip Mix 8-oz.s Water Chestnuts, Drained & Chopped 3 Green Onions, Chopped In medium bowl, stir spinach, sour cream, mayonnsise, soup mix, water chestnuts & grrrm onions till well mixed. Cover; chill 2 hours to blend flavors. Stir well. If desired, spoon into round bread bowl SErve with cut up veggies or chips. **Can add 1-(8-oz.) pkg. Shredded SWiss Cheese, a couple shakes of Tabasco Sauce and Arichoke Hearts.

It said protected forum under Big Red Recipes and that I couldn't start a new topic in the Big Red Forum. So I am now Roxy15 instead of ninersgirl or Roxy..had to use another email address and come up with a new name. Sorry if I have caused any problems to do this. I am so sorry if I did.
