Easy Potato Pancakes

Easy Potato Pancakes:

 

3 cups frozen shredded hash brown potatoes

2 T. all-purpose flour

2 eggs, beaten

3 T. butter, melted

1-1/2 tsp.s water

1/2 tsp. salt

1 T. vegetable oil

 

Place the hash browns in a strainer; rinse with cold water until thawed. Drain thoroughly; transfer to a large bowl. Add the flour, eggs, butter, water and salt; mix well.

 

Heat oil in a large skillet over medium heat. Drop batter by 1/3 cupfuls into oil; fry until golden brown on both sides. Drain on paper towels.

I would add some dried or fresh cut onion. (no offense Ninersgirl)

Potato pancakes rock people. Grew up eaten them in PA when I was a wee one. Have not had any in a very long time. Potato pancakes and pierogies (sp) were a staple in my younger days.

My wife grew up eating potato pancakes and introduced me to them a few months and I must admit, they're really good. This is a recipe my wife and I will have to try.
