hskrmama Posted October 23, 2008 Share Posted October 23, 2008 1/2 lb sausage 1 md sweet red pepper,chopped 1 md green pepper,chopped 1 md onion, chopped 2 tsp canola oil 5 tomatoes, seeded and chopped 6 eggs 1/2 c milk 1/4 tsp salt 1/2 c of mexican cheese 6 flour tortillas Brown Sausage, remove and drain. Saute peppers and onions in oil until tender. Add Tomatoes, saute 1-2 mins longer. In a large bowl whisk eggs, milk and salt. Reduce heat to medium add egg mix and sausage. Cook until eggs are done. Spoon mixture into center of tortilla, top with cheese and roll up. I will sometimes quadruple this recipe and with leftovers, roll up in saran wrap and put in freezer. Hubby and son will nuke them in the morning for 30 to 60 seconds, depending and how much filling and eat. They will last about a week in the freezer. Quote Link to comment
