Roxy15 Posted September 28, 2010 Share Posted September 28, 2010 Cheesy Onion POtatoes: I made this in the morning..stuck it in the refrigerator so all I had to do was bake them for dinner. Wash and bake some potatoes in a 400* oven until done. I didn't wrap them in foil..just baked them. Very thinly slice up a large sweet onion and set that aside. Have some butter or margarine on hand. Grated Medium Cheddar Cheese-(Monterey Jack Cheese is good too) Fresh Ground Pepper When the potatoes are done and cooled enough to touch, slice them into 1/4 inch slices. Lightly butter a covered casserole dish (the size depends on how much you're making) and layer some potatoes, some butter, a bit of pepper, some of the onions and then some grated medium cheddar cheese. Continue doing this until you get to the top of the dish and end with cheese. Cover the casserole dish and place it in a preheated 350* oven for about 40 minutes, so the onions are cooked. Uncover the casserole and let it sit for about 5 minutes and then serve it up. Easy and delicious! (You can also do this on the grill, just layer the ingredients in heavy duty foil and wrap up well so the cheese and butter doesn't drip out.) Quote Link to comment
