Sweet Potato Bake

We don't care for sweet potatos so I can't vouch for this recipe. I just heard it was good if you like to make sweet potatoes for Thanksgiving.

 

Sweet Potato Bake:

 

1 40-oz. can sweet potato

3/4 c. white sugar

1/2 c. melted butter

2 eggs, beaten

1/2 t. cinnamon

1 t. vanilla

 

Topping

 

1 c. brown sugar

1/3 c. flour

1/3 c. melted butter

1 cup chopped nuts

 

Preheat oven to 350º. Drain and mash sweet potatoes. Add all ingredients except topping. Mix thoroughly. Spread in a 9x13 baking dish. Crumble together topping ingredients. Sprinkle over sweet potatoes. Bake for 30 minutes.
