Spicy Chicken Soup

I haven't made this...I found this recipe on the web and thought it looked and sounded interesting. I have been searching for a long time for a chicken noodle soup that isn't like what you get from a can. I am always looking for something different and sometimes I use some ingredients in a recipe I find and make it my own by adding stuff. This recipe doesn't have noodles, but, it may by the time I get done with it haha...I am what you call an eye ball & taste it cook.

 

Spicy Chicken Soup:

 

1-(7-oz.) Can Chipotle Chiles In Adobo Sauce

1 Tsp. Olive Oil

1 Cup Chopped Green Bell Pepper

1/2 Cup Chopped Green Onions

1 T. Minced Garlic

1 Tsp. Ground Cumin

2 Cups Chopped Cooked Chicken Breast Strips-(Such As Louis Rich, About 12-oz.s)

2-(14-1/2-oz.) Cans Chicken Broth

1-(14-1/2-oz.) Can Del Monte Diced Tomatoes & Green Chiles, Undrained

1-(11-oz.) Can Whole Kernel Corn With Sweet Peppers, Drained

 

Remove 1 Chile from can; reserve the remaining Chiles and Sauce for another use. Mince Chile.

Heat the oil in a large saucepan over medium-high heat.

 

Add bell pepper, onions, garlic, and cumin; Sauté 4 minutes or until the vegetables are soft.

 

Stir In Minced Chile, Chicken, Chicken Broth, Tomatoes, and Corn.

 

Bring to a boil; reduce heat, and simmer 3 minutes.

 

***I May Add White Cooked Rice Or Cooked Egg Noodles & Sliced Fresh Mushrooms.

 

***May Cook Fresh Chicken Breasts In Crockpot With Chopped Onions, Garlic. Sprinkle Chicken Breasts With Tony Chacheres More Spice Seasoning & Chicken Broth instead of using Louis Rich Chicken Breasts.
