Chicken Quesadillas

Chicken Quesadillas:

 

2 Boneless, Skinless Chicken Breasts

1-(15-oz.) Can Diced Tomatoes & Green Chiles & Spices

1/2 Tsp. Cumin

1 Can Refried Beans

Cheddar Cheese, Grated

Flour Tortillas

 

Cook chicken breasts in 1 T. Vegetable Oil.

 

Place chicken on cutting board and shred with 2 forks.

 

Return chicken to pan.

 

Stir in Diced Tomatoes & Green Chiles & Spices and Cumin.

 

Simmer for 10-15 minutes.

 

Warm Refried Beans.

 

Layer Refried Beans, Chicken & Cheese on 1/2 of one Flour Tortilla.

 

Fold over Flour Tortilla & warm on a griddle until browned & cheese is melted.

 

Top with Sour Cream.
