Salsa/Pic

I haven’t made this, it got great reviews.

 

Salsa:

 

Feel free to adjust your ingredients to your liking. 

 

4 Vine-Ripened Tomatoes, Quartered
2 Small Yellow Onions, Cut Into Wedges
6 Garlic Cloves, Peeled
3 Serrano Chili Peppers Or Jalapeños, Stemmed-(Use Less For A Milder Salsa)
2 T. Olive Oil
2 Tsp. Salt
1 Tsp. Cumin
1/4 Cup Cilantro Leaves
1 T. Fresh Lime Juice-(More If Desired)

 

Preheat the broiler to high and line a baking sheet with aluminum foil.

 

Place the tomatoes, onions, garlic, whole Serrano chile peppers and olive oil directly on the baking sheet and gently toss together. Broil until softened and charred, about 10-15 minutes.

 

Transfer the vegetables and juices to a blender. Add the salt and cumin, cilantro and fresh lime juice. Pulse until the cilantro is chopped.

 

Transfer to a sauce pan, Bring to a boil and then reduce the heat to low. Simmer for 15 minutes until it has taken on a deep red color and has more body. (Use very ripe tomatoes if you want your sauce to take on the deep red color.

 

Cool then serve.
