Easy Zucchini Pizzas:

 

4 Medium Zucchini

1 Medium Onion, Chopped

1/2 Cup Chopped Sweet Peppers

1 Clove Garlic, Minced

Pepperoni Slices

1 Cup Or So Tomato Sauce Or Pizza Sauce

1/4 Cup Shredded Mozzarella Or Monterey Jack & Cheddar Cheese, Per Zucchini

Sliced Tomato

Olive Oil

 

Cut zucchini in half lengthwise and brush with olive oil.

 

Top with pizza sauce, tomatoes, onions, minced garlic, pepperoni, and shredded Monterey Jack or Mozzarella and Cheddar Cheese.

 

Bake 30-40 minutes at 375 degrees.
