  2. Jalapeno Taco Pie: 1 lb. Ground Beef 1 Onion, Finely Diced Salt & Pepper To Taste 1 Pkg. Taco Seasoning Mix ***Follow Package Directions 1 Cup Nacho Sliced Jalapeno Peppers, Diced 1 Pkg. Taco Shells-(12 Or More) 4 Cups Cheddar Cheese 1 Cup Tomatoes, Diced Preheat oven to 375 degrees. In large frying pan, brown beef with onion, salt and pepper over medium heat. Break meat into small pieces. After the meat is thoroughly cooked, drain off the fat. Stir in water with Taco Seasoning Mix. Simmer for 5 minutes. Remove from heat. Add Jalapenos to meat, mix well. Break Taco Shells into halves and layer half of them on a lightly greased 9x13-in. baking dish. Spoon half of meat mixture over Taco Shells, and sprinkle with 2 cups cheese. Repeat with Taco Shells, Meat & Cheese. Top with tomatoes and serve.
  3. Frito-Lay Appetizer: 1 lb. Ground Beef 1 Onion, Finely Diced Salt & Pepper To Taste 1-(16-oz.) Can Refried Beans 1-(15-oz.) Bag Frito-Lay Fritos King-Size Corn Chips 4 Cups Shredded Cheddar Cheese 1-(16-oz.) Jar Nacho-Sliced Jalapeno Peppers In large frying pan, brown beef with onion, salt and pepper over medium heat. Break meat into small pieces. After the meat is thoroughly cooked, drain off the fat. In a small sauce pan, heat Refried Beans with1/4 cup water over medium heat. Take two handfuls of chips and arrange them on a microwave friendly plate. Spread 1/2 cup Refried Beans over the Fritos. Spread 1/2 cup of Shredded Cheddar Cheese over the Refried Beans. Spread 1/2 cup meat over the cheese, top with 1/2 cup cheese. Spread 1/3 cup Jalapenos over the cheese, microwave on high for 1-1/2 minutes, and serve.
  4. Jalapeno Spread Cheesy Roll-Ups: 1 Cup Sour Cream 1-(8-oz.) Pkg. Cream Cheese 1/2-(8-oz.) Jar, Nacho-Sliced Jalapeno Peppers, Diced 1/2 Cup Shredded Cheddar Cheese 8-(10-in.) Flour Tortillas Salsa-(Opt.) In a medium mixing bowl mix Sour Cream, Cream Cheese, Jalapenos and Cheddar Cheese. Spread a thin layer of the mixture on each Flour Tortilla. Gently roll Flour Tortillas into tight tubes. Place the Jalapeno Spread Cheesy Rollups onto a dish, wrap with Saran Wrap, and chill for at least one hour. To serve, slice into 1-inch slices, serve slices on their side. Put Salsa in a bowl off to the side for dipping.
  5. Chili Nachos: 2 Large Handfuls Restaurant-Style Tortilla Chips 1 Cup Chili-Homemade Or Canned 1 Cup Shredded Cheddar Cheese 1/4 Cup Nacho-Sliced Jalapeno Peppers 1. Place two large handfuls of chips on a microwave plate. 2. Pour Chili over chips, sprinkle with Shredded Cheddar Cheese, Onions & Jalapenos. 3. Microwave 1-1/2 minutes. Top With Sour Cream-Opt.

Fresh Shrimp From The Deli Or Salad Shrimp 1 Pkg. Imitation Crab Meat 12-oz. Farmer John Hot Pork Sausage Or Farmer Johns Hot Links, Sliced 1 Yellow Onion, Chopped-(Or To Taste) 2 Roma Tomatoes, Chopped-(Or To Taste) 2 Avocados-(Or To Taste) 1 Bunch Scallions Nacho Sliced Jalapeno Peppers From Jar, To Taste Sour Cream 1-(8-oz.) Pkg. Shredded Sharp Cheddar Cheese 1-(8-oz.) Pkg. Shredded Monterey Jack Cheese Or Monterey Pepper Jack Cheese Dice Onions, Tomatoes, Avocados & Scallions. Put Each Separately In Covered Bowls; Refrigerate. Cook Farmer Johns Hot Sausage Or Sliced Hot Links, Drain Preheat oven to 425 degrees. Remove Shrimp Tail-(If Using Fresh Shrimp) Put Shrimp In Colander & Wash Thoroughly In Cold Water. Put Shrimp In A Bowl & Sprinkle Tony Chachere’s Spice It Up Seasoning Over The Shrimp. Layer A Large Oven Safe Baking Dish With The Following: Tortilla Chips, Shrimp, Crab Meat, Sausage, Shredded Cheddar Cheese & Shredded Monterey Jack Cheese Or Monterey Pepper Jack Cheese-Alternate Cheeses When Layering. The Top Layer Should Be With Cheese When Completed. Repeat Layers 3 Times. Place in oven. Bake for 30 minutes or until mixture is bubbly. Top With Diced Tomatoes, Avocados, Scallions, Nacho Sliced Jalapeno Peppers & Sour Cream.

  8. I have no idea if I have posted this one yet or not.. There's nothing worse than a snotty doctor's receptionist who insists you tell her what is wrong in a room full of other patients. I know we all have experienced this, and I love the way this old guy handled it. An 86 year old man walked into a crowded doctor's office. As he approached the desk, the receptionist said, "Yes sir, what are you seeing the doctor for today?" There's something wrong with my penis," he replied. The receptionist became irritated and said, "You shouldn't come into a crowded office and say things like that." Why not? You asked me what was wrong and I told you," he said. The receptionist replied, "You've obviously caused some embarrassment in this room full of people. You should have said there is something wrong with your ear or something and then discussed the problem further with the doctor in private." The man walked out, waited several minutes and then re-entered. The receptionist smiled smugly and asked, "Yes?" "There's something wrong with my ear," he stated. The receptionist nodded approvingly and smiled, knowing he had taken her advice. "And what is wrong with your ear, Sir?" I can't piss out of it," the man replied. The doctor's office erupted in laughter.

  10. Hamburger Tater Tot Casserole: 1 lb. ground beef 1 Onion, Chopped 1 Can Cream Of Mushroom Soup Frozen Tater Tots Shredded Cheese Of Your Choice Preheat oven to 400 degrees. Brown ground beef with onion-***See Note Below**** drain. Put ground beef in large bowl. Mix in Cream Of Mushroom Soup; Add Salt & Pepper to taste. Transfer to an 8x8-in. baking pan and arrange Tater Tots on top to cover. Bake for 25 min. Remove from oven and sprinkle shredded cheese, place back into oven till cheese is melted, about 5 min. and serve. ****Make it your own variations: add frozen peas or carrots or any leftover veggies. Spice it up with red pepper flakes. Brown meat with canned green chile’s or jalapeno’s or onions.
  11. Rice Krispie Goodies: Melt 1 package caramels and 4 T. water slowly in Dutch Oven. Pour 5 cups Rice Krispies and 1 cup White Peanuts into same pan; stir. Pour Rice Krispie mixture into a 9x13-in. pan that has been sprayed with Pam. Melt 1 cup Butterscotch Chips and 1 cup Chocolate Chips in same pan; pour over above mixture.
  12. Hamburger Caserole: 1 lb. hamburger 1 can cream of mushroom soup 1 can green beans, drained 1/2 cup milk 1 onion, chopped Salt & Pepper to taste Brown hanburger; drain and put in a large bowl. Add the rest of the ingredients; mix till well combined. Put hamburger mixture in a casseole dish sprayed with Pam. Top with Tater Tots. Bake at 350 degrees until heated through...check after 30 minutes or so...may take longer...I just check it.

  14. I have made this before and it is really good and tender. Baked Steak: Depending on how many people you have to feed...use the amount of ingredients that you think you will need. BUY MINUTE STEAKS ONLY CREAM OF MUSHROOM SOUP OR CELERY SOUP OR DO HALF AND HALF- CHOPPED OHIONS CHOPPED GARLIC Lipton Onion Mushroom Soup-Opt. FLOUR MINUTE STEAKS ON BOTH SIDES & BROWN WITH A LITTLE OIL IN SKILLET. TAKE MINUTE STEAKS OUT ONCE BROWNED AND PUT THEM IN A ROASTER. PUT ONIONS AND GARLIC ON STEAK. Sprinkle Onion Mushroom Soup All Over The Steak. POUR SOUP OVER MINUTE STEAKS AND BAKE WITH A LID ON ROASTER AT A LOW TEMPERATURE ALL DAY. THE LONGER IT BAKES AT LOW TEMPERATURE..THE MORE TENDER IT WILL BE.
  15. i have made this and it is good and easy to make. Make sure you read the notes ****** I bake a chuck roast in the oven or if I have time, in the crockpot...I am sure I have put the recipes on how to make it somewhere in here or just use your own recipe. Just make sure you use onions, garlic or onion soup mix or whatever you usually use for seasonings. I change seasonings alot when I cook. I may do it one way one time and do it differentky the next time. Once the roast is done, pour broth off and sliver the roast beef. Put slivered roast beef in the crockpot-DON'T USE ANY BROTH-SAVE IT FOR ANOTHER USE IN REFRIGERATOR- add chopped onions and garlic, and whatever seasonings you like to use. Add 1 bottle of Catalina Dressing-(salad dressing isle in store) and 1 bottle Open Pit BBQ Sauce. ***The Calalina Dreessing may sound strange to you, but, believe me it is good. ***I would make sure I had 2 bottles of each, just in case 1 bottle of each isn't saucy enough. Simmer on low all day in the crockpot; stir occasionally if you havc time. Serve on Sesame Seed Hambuger Buns.

  17. Red Potato Bites: 1-1/2 lbs. Very Small Red Potatoes 4 Slices Bacon 1 Cup Sour Cream 1/2 Tsp. Seasoned Salt 1/4 Tsp. Freshly Cracked Black Pepper 1 T. Chopped Fresh Chives 1/2 Cup Shredded Cheddar Cheese Preheat the oven to 375 degrees. Place potatoes in a saucepan, and add enough water to cover. Bring to boil, and cook until tender but still firm, about 10 minutes. Drain, and cool in a bowl of cold water. Cook bacon in a skillet over medium-high heat until evenly browned. Drain, crumble, and set aside. Remove cooled potatoes from water. Pat dry with a paper towel, and cut in half. Using a small spoon, carefully remove a small amount from center, leaving approximately 1/4 inch rim around each potato. Set reserved potato aside. In a bowl, mix together reserved potato, sour cream, bacon, seasoned salt, pepper, and chives. Spoon a small amount of mixture into each potato half and place on a baking sheet. Top each potato off with some shredded cheese. Bake for 10 minutes in the preheated oven, or until cheese is melted and potatoes are warmed through. Garnish with parsley-(opt.); serve.
  18. Potato Soup: 4 Large Baking Potatoes 2/3 Cup Butter 2/3 Cup Flour 6 Cups Milk 3/4 Tsp. Salt 1/2 Tsp. Black Pepper 1/2 Tsp. White Pepper 4 Green Onions, Chopped & Divided 12 Slices Bacon, Cooked & Crumbled 1-1/4 Cups Cheddar Cheese, Shredded & Divided 8-oz.s Sour Cream Wash, dry and prick potatoes with a fork. Bake at 400 degees for 1 hour or until done. Let cool and cut in half lengthwise and scoop out the pulp, set aside. Use the skins for something else, such as fried potato skins! Melt butter in a heavy saucepan over low heat, add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk, cook over medium heat, stirring constantly until the mixture is thickened and bubbly. Add potato pulp, salt, peppers, 2 T. green onion, half the bacon, and 1 cup of the Cheese. Cook until thoroughly heated. Stir in the sour cream. Add extra milk if necessary for desired consistency. Serve with remaining green onions, bacon and cheese.

  21. They are growing up fast...can't believe they are 18 months old already. I am sure you and your wife love every second when they get to be a handful. I can't believe they are 18 months old already. You are great parents and the boys love you to pieces:) When you have time..now & then keep us up to date on how and what they are doing ok? Before you know it..they will be asking for the keys to the car. Some kids walk early..are they walking yet?
  22. I haven't made this ok? I love anything with bacon:) I found this while working on my recipe book. The only ingredient that I question is the rosemary..but..that is just me. I don't like parsley, cilantro and stuff like that. Knowing me...I would probably keep that out and just salt the potatoes with some Garlic Salt and Pepper or sprinkle Tony Chachere's Spice It Up Seasoning on it. I would use Baby Red Potatoes also. If you make it...hope you like it:) I just now thought of this idea too...I think a slice of Cheddar Cheese wrapped around the potato and then the bacon would be good on it.
  23. Bacon Wrapped Potato Bites With Spicy Sour Cream Dipping Sauce: 1 lb. Small Or Medium Red Potatoes 1-1/2 Tsp. Chopped Fresh Rosemary 1 T. Olive Oil 1/2 Tsp. Salt Freshly Ground Black Pepper 12 oz.s To lb. Thick-Cut Bacon 1 Cup-(8-oz.s) Sour Cream 1 Tsp. Hot Sauce Salt & Pepper To Taste Preheat the oven to 400 degrees. Wash and dry the potatoes. Chop them into 1-inch pieces, keeping the chunks roughly the same size, even if they aren't the exact same shape. Put the potatoes in a medium pot, cover with cold water, and bring to a boil. Season the water with salt. Once the water begins to boil, cook the potatoes for about 3 to 4 minutes, until you can stick a fork into them without too much resistance. You want the potatoes to be almost, but not fully, cooked through (so they won't fall apart during the next steps). Drain the potatoes and put them in a large bowl. Add the Rosemary, Olive Oil, Salt, and a few grinds of Pepper, and toss until the potatoes are evenly coated. Cut the strips of bacon in half (with a short, vertical slice). Wrap each piece of potato in a half-strip of bacon, securing it with a toothpick. Put the potatoes on a baking sheet lined with parchment paper or aluminum foil. You may need to cook the potatoes in two batches. Cook the potatoes for 15 minutes, then flip each piece. Cook for another 10 to 15 minutes, until the bacon is cooked through and crisp. Mix the Sour Cream and Hot Sauce in a small bowl. Season with Salt and Pepper. Pile the potato bites on a plate and serve alongside the dip.
  24. If you want to pick up a good movie to watch...get "The Town". It is about bank robbers. I liked it better than the other 2 movies that I mentioned the other day. The other movie we watched was called "Going The Distance"..it is a romance movie..it was ok.....but..I liked "The Town" alot better.
