Red Beans and Rice

This is the Betty Crocker version . . . which isn't the traditional style. It makes for a good, filling, meal.

 

Ingredients:

1 (15 oz) can Red Kidney Beans, drain and keep liquid separate.

Water (add to bean liquid until you have 2 cups total)

3-4 slices of bacon chopped into small pieces (or salt pork)

1 medium green pepper, chopped.

1 medium onion, chopped.

1 cup uncooked white rice

1 teaspoon salt.

Directions:

1. In 10 inch skillet, cook bacon until crisp. Stir in bell pepper and onion and cook until onion is tender.

2. Add bean liquid and water, bacon, pepper, onion, rice, beans, and salt in 3 quart pan. Heat to boiling, stirring once or twice. Reduce heat. Cover. Simmer 14 minutes without lifting cover. Remove from heat. Fluff with fork. Cover. Let steam 5-10 minutes away from heat.

I think I spotted an error in this. It should say 6-8 pieces of bacon. The first 3-4 will find there way into a sandwich of some sort...

:D Excellent point. Cook the whole package. You'll find a home for all of it.

 

It's kind of like when a recipe calls for 1/2 of a beer.

Half a beer. Thats blasphemy. :grr:D
