I also am experimenting. I'm smoking a venison neck roast. Anyone cooked one of these before? I have the feeling it's either going to be awesome or it's going in the trash. Quote Link to comment

BigRedBuster Posted September 9, 2014 Share Posted September 9, 2014 This is the basic recipe I used. LINK I used a neck roast. I didn't inject it and it was on the smoker for about 8 hours. After about 4 hours I wrapped it in aluminum foil with about a half cup of beer to add moisture. I left it on the smoker till the internal temp was over 195 so it would fall apart.
