Just had a butcher explain some cuts of meat...it is pretty cool!

Usually go for as many chops as can get, then shoulder blade steaks (unless I'm planning on making pulled pork-then I'll keep the butts) lots of ground sausage, fresh side or bacon. Pretty much just depends what sounds best when I'm filling out the cut order. Hams are readily available at the grocery store so I'll often take that sliced and uncured.
