Smoking all kinds of meat tomorrow. A couple pork butts, a corned beef brisket and two types of sausage. Gonna be painful...Friday...Lent. Really should've picked any other day to do it.

Oh you gotta try smoked corned beef. It really is one of the best things to smoke. I usually just take it out of the bag, put a bunch of fresh cracked black pepper on it, put it on to smoke until it hits about 150+ (the stall point for brisket) then wrap it in foil and then take it to about 203. Very similar to pastrami when done. So good.
