  1. Anyone sear chicken hindquarter in a pan or on the grill before smoking them?  I hate smoked chicken skin, it is so rubbery.

      Yeah, you can cook chicken successfully at just about any temperature, but if you cook it at low temperatures the whole time, the skin will probably come out nasty. High temperatures yield better skin. You can try starting it in cold smoke, and then crank up the temperature to high (450F+) as it finishes cooking.

       

      One best things you can do is to dry the skin out before you cook it. At least pat it dry with some paper towels before cooking, or better yet leave it uncovered in the fridge overnight. Obviously that doesn't work with marinades or wet brines, but I'd recommend dry brining over those anyway.

       

      Another good technique is to steam the chicken before any other cooking. It renders the fat beneath the skin, so the skin loosens and has more chance to crisp up. This is a very common technique in Asian cooking, especially with fattier birds like ducks.

       

      Honestly, though, these days I cook it skinless more often than not. I don't really miss it - it lets the meat absorb more of the smoke flavor.

    What console would you choose?  PS3 or XBOX 360?  It will be for these games:  NBA Jams, Top Spin 4, MVP06 College Basebal, FIFA, WWE All-Stars (MachoMan & Hulkamaniacs), ESPN NFL2k005 (Dolphins/Bears fan here) , NFL Blitz, and NCAA Football 2014.

  5. Glad to know our society has become a bow down culture. This virus is a coronavirus, just like evey other coronavirus that came before it. It HAS to run its course and will mutate to a much less lethal form in the end. Partial herd immunity is the best thing we can do. There will NEVER be a true vaccine. Why??? B/c there has never been a coronavirus vaccine due to mutation rate, and there will never be one. It is a coronavirus, just like your regular cold virus. It will have to eventually become a herd type immunity to decrease its mortality rate. Just like the regular cold virus, a coronavirus, was initially deadly, it will eventually become less deadly. The original coronavirus wasnt made a big deal b/c scientists didnt know what was happening, and didnt know what was happening like we do now with all of our technology. But, it was just like it is now, but the political bs media wasnt pushing the propaganda. Quit being sheep ffs!! People are so open to persuasion now. Use your fuvkin brain, this is not the first time this has happened in the world. Its just the first time you sheep are letting the media decide your beliefs. Its a new coronavirus!! It sucks, nobody is safe, it will make its rounds, people will die, herd immunity will be the key, and there will never be a good vaccine (<20% effective]. We cannot let this thing control our lives. Protect the most vulnerable, but otherwise life as normal has to go on.

      It was a sad day when Spangle's (in Kansas) finally raised the price of the Gourmet Supreme value pack above $2.99. They held out a LONG time on that one, most places were in the $5 range for a combo meal like that, and for a fast food burger chain they're pretty solid.

      @BigRedBuster I went into a Menard's store on the day they opened (first one in the region). They played the jingle a few times on the in-store PA, and I asked an employee near me if she was sick of hearing it yet. She said they'd been playing it all the while they'd been prepping the store for opening, and the employees had already been sick of it for weeks. :lol:

      Sam's and Costco are about the only place around here you can get whole briskets. When I moved here, I checked like half a dozen big chains and a little IGA, and all any of them had was overpriced flats.

       

      Sam's has a deal going now through Sunday where membership costs $45 but you get $45 off your first purchase, so I signed up mostly just so that I could get briskets, lol. I can also get a membership for $25 through my credit union; I'll probably use that for renewal.

  20. Tonight I learned that smoked pork chops do not require as much rub as a pork butt.  Wow!  I'm drinking a beer per bite!

      Just waiting for the price of brisket to come down ahead of the 4th. A few months ago, it was like $3.60/lb, a few weeks ago, it was like $6.75/lb, last I checked it was like $4.85/lb.
