I disagree with @Red Five, I love the formal dinner because it's always the best meal of the cruise and half the people skip it, so they'll usually let you have more of the good stuff.

All three of those places have great local dishes. Make sure you try and find some local places to eat if you can. 

Coz is pretty standard Mexican fare. We find a beach club online then have a cabbie take us there.  Drinks are a lot cheaper at the club than on the ship.

I believe Falmouth is in the middle of nowhere Jamaica, so any excursions are at least an hour drive away.  We just walked around the gated port area and got back on the ship.  You do NOT want to leave the gated area in port here and wander on foot.
