I've seen Chris Cornell do an acoustic version of the song that was really cool. Also, a lot of people don't know that I Will Always Love You from Whitney Houston was originally a Dolly Parton song. They were an ok band, but they did have a great cover of TLC's "Creep." Basically, if it's a good song, it can probably sound good, no matter who is playing it, or the arrangement they use.
